Hatch Beaker + Burr -- Spokane, WA…read more Midweek in Spokane and I was not expecting to walk into what felt like a warm hug disguised as a café. Wednesday morning. Doors open. Immediate vibe shift. Warm. Vibrant. Eclectic mix of humans scattered throughout -- laptops open, friends mid-laugh, someone clearly pretending to work. The energy felt alive without being chaotic. That's a sweet spot. The woman who served us? Absolute pro. Friendly with everyone. The kind of person who makes you feel like a regular on your first visit. Easy to talk to. Zero rush. Hospitality done right. We grabbed a solid-sized table for the group while one of the crew made a pastry run. Strong team execution. Now for the order: Iced latte. Almond milk. Honey. My control beverage. My combine drill. It was exactly what I expected -- smooth, balanced, no drama. And somehow... it tasted better because of the room. Setting matters. Coffee absorbs vibes. That's science.* (*Not verified.) This is one of those places you can: * Meet friends for breakfast * Post up and "work" for 4 hours * Or grab a quick coffee before pretending you're not late Would I come back? Absolutely. For the coffee, yes. For the vibes? Immediately. If you're visiting Spokane, this is a must-stop. No overthinking required. Rating 4.3 / 5 Açaí Berries Breakdown * Taste: 4.2/5 * Vibes: 4.7/5 * Service: 5/5 * Sit-All-Day Potential: High Current Status: Spokane Approved Lesson Learned: Coffee tastes better when the room feels right. Next Stop: Back to bowls. Always. -- The Açaí Guy

I wanted to get a latte with maybe a seasonal flavor. Was disappointed with their flavor selections. I asked if they have holidays flavors and they said no. They had pumpkin spice only. Ended up just getting a chai. It was fine tasting, pretty average sweet chai. Was also $7.50 for a 16 oz chai which is steep.

At first, I kept coming back because the coffee is consistently excellent, honestly some of the best I've had. Every drink is made with care, and the quality never slips. The hand pies are also a standout and have become one of my go-to breakfasts. Over time, though, what really keeps me coming back is the people. Michaela, Kelly, and Cambriah are incredible at what they do. They make genuinely great coffee, but they also create an environment that feels welcoming and easy. They manage to keep things running smoothly while still taking the time to connect with customers in a way that feels natural and genuine. It's rare to find a place that delivers both high-quality products and such a consistently positive experience. New Love does both, and it's clear that the baristas are a big part of that. I always leave in a better mood than I walked in.

The staff was super friendly and genuinely welcoming, which made the whole experience feel easy and relaxed. My drink was great, and the overall vibe was calm and comfortable. It was definitely a spot I could see myself coming back to for a quiet morning or a quick pick-me-up. The only thing that threw me off was the layout and aesthetic. It looked like there were other businesses, maybe real estate offices, tucked into the same space, and it made the flow feel a little confusing at first. Not a deal-breaker by any means, just not what I expected when walking into a coffee shop. Overall, really good coffee, great people, and a nice environment , just a slightly odd setup. I'd still recommend giving it a try!

Shortly after I placed my initial review, someone who doesn't live in the area posted how they didn't understand the "other reviews" (I was the only one at the time) because they come in all the time and the place is great. Yeah. They come in all the time. From the other side of Washington State. Hmmm, yeah, not a fake reviewer who probably are person friends of the business owner at all. Totally legit. Response from the business owner themselves elsewhere was flippant and sarcastic. And completely ignored my suggestion that as a place that sells food, they should focus on selling food that actually tastes good. I know, I am weird, I happen to like food that is prepared well and tastes good. I imagine this bistro is going to have the same bad luck as the last three ideas that didn't last very long here.

Emily, who was running the counter, made the entire visit memorable. She kept me laughing the whole time with her fun personality and warm energy, and she genuinely made the place feel inviting. At one point, Chayla came over and started giving recommendations for restaurants, coffee spots, and things to do around town, and she absolutely dialed in some great suggestions. What really stood out was how thoughtful Emily was. She even asked if my wife might want a drink to go, and when I mentioned she can't have caffeine, she immediately suggested a latte blend with ginger and cinnamon -- flavors she loves. That kind of kindness and attention to detail says a lot about a place. I ordered the Honey Lavender Latte, and it was excellent. Smooth, balanced, and comforting. The lavender was soft and calming without overpowering the drink, while the honey rounded everything out perfectly. I also grabbed a double espresso and a vanilla scone later on, and both were fantastic. The scone was moist, lightly sweet, and paired perfectly with the coffee. While they didn't offer pour over or French press, the brewed coffee itself was still really good -- smooth, warm, and easy to enjoy. This place had that rare "home away from home" feeling. Great coffee is one thing, but genuine people and a welcoming atmosphere are what make you want to come back. Definitely one of my favorite stops of the trip.
