They have what looked like a private dining space inside a barn-style shed, several gas fire pits, and even a slightly elevated platform that looked perfect for live music. Ordering is simple -- you place both food and drink orders at the counter, then they bring everything out to your table. Even though the place was busy, the food came out fast and piping hot. The food itself was outstanding. I ordered the chicken and biscuits and my wife got the chilaquiles. Both portions were huge. The chicken and biscuits were exactly what I was hoping for: smothered in rich country gravy with a perfectly fried flattened chicken breast that was crispy on the outside and juicy inside. The buttermilk biscuit was golden, flaky, buttery, and had the perfect balance of soft interior and crisp edges. I honestly got full halfway through my plate and never even got a chance to try the wife's chilaquiles. The drip coffee was excellent too -- simple, hot, and exactly what good breakfast coffee should be. There's street parking along with a small parking lot across the street. We also ordered their green chile pork + egg plate that came with diced onions and potatoes. Asked for the eggs to be over medium and they came out over hard. The pork was pretty tough and the potatoes were too crispy for the overall meal itself and it lacked sauce. Also came with two flour tortillas but they were super small, street taco size. Don't think I'd personally come back, but they have decent reviews so maybe they are more known for other items on their menu.

When we first walked in, we immediately noticed how warm it was and how popular of a coffee shop it was! There is also a bar and a larger area in the back with a stage, so lots of seating is available for studying, catching up with a friend, or watching a live show. I got the Campfire, which was very heavy with chocolate flavor. I honestly could not taste any graham or marshmallow flavor, but it definitely was a stronger and sweeter coffee than the Dark Sky, which is what my friend got. The Dark Sky had very subtle mint flavor, and as acid mint lovers, we wish there would have been more! Overall, a really great cafe that I would frequent again, especially when shopping or walking around downtown.

We popped in on a Monday morning hoping to score some great grub and we certainly found some! Cubano ($20.95) - Starting with the bread - it's really fluffy, not toasted or pressed as with usual cubanos. Unfortunately, it's probably a little too light for the sandwich because some parts get mushy from being soaked in all the dijonnaise. The dijonnaise is very sweet, creamy with a mustardy zing. I think they add a bit too much, making the sandwich more fatty and messy to eat than I like (not to mention what I stated before about it soaking into the bread). The meat is fantastic. Both porchetta and ham are griddled on the flat top, giving them a developed and concentrated edge. The ham is to the point of being like country ham, while the porchetta still has great seasoned porky flavor. I believe they griddle the swiss cheese alongside the meat. It melts and crisps up into a cheese skirt, adding a fantastic texture to the sandwich. There's a lot of crinkle cut pickles underneath the meat, but it's not enough acid to cut through all that fat. Sandwiches come with a side of house chips. They are fried until a darker golden brown color, but aren't burnt. This gives a great kettle chip-like crunch. Even with different sized chips, they are very evenly fried with all chips being the same texture. They are salted the perfect amount. (4/5) Aleppo Pepper Pastrami sub Tomato Soup ($22.75) - This place is famous for their pastrami, and I can tell the quality. It's cooked on the griddle until it develops crisp edges. It's fatty, but the fat is rendered so there are no chewy and leathery parts. The meat is extremely tender and thinly sliced. It's honestly almost like bacon in texture, but the taste is completely different, with the exterior spices and pepper making a huge impact along with the rich concentrated meatiness inside. The bread is a nice toasted sourdough, not strongly sour in flavor, but definitely noticeable. The bottom slice is slathered with plenty of nopales studded cream cheese. It's added in a large amount and is an extremely creamy and fatty substance yet somehow doesn't overwhelm the sandwich. It's warm but not melty. The nopales are clearly there but I didn't find it to contribute much. The pastrami is layered on top of that followed by a ton of sweet brown caramelized onions that are very tender. An entire green chile, roasted and super smoky, is above that. Finally, aleppo mustard is spread on the top slice of bread. Between the green chile and the aleppo, there's a slight warmth that tinges the sandwich. It's nothing too spicy. Instead of chips, we opted to sub the Tomato Soup (no fee). It's very homestyle, full of tomato richness in a thick blend. It has a strong tangy tomato essence. There's basil oil drizzled on top for a boost of freshness. The soup is unfortunately quite a bit too acidic for my tastes, but that's only by itself! While very acidic, the soup is actually great as a balance to the sandwich (along with the pickle of course) since there's so much richness and fat coming in between the bread. (5/5) Proper Meats + Provisions definitely serves some great sandwiches. We were considering visiting again for our 2 full days in Flagstaff, but weren't able to make it because they close so early at 6! The meat was smokey and tender and the bread was great. The green chilies went well along with the cactus cream cheese. We also ordered a side of pork chili Verde soup. It was also amazing and very tender and large chunks of soft braised pork. My friends ordered the chicken Po boy and the Philly cheesesteak. Both were also excellent. The chicken Po boy was very good in both the tender chicken meat and breading and also the sauce and everything else. The staff was super nice and this had a deli vibe with casual seating and eating. An excellent place to stop at if you're in Flagstaff.
