We were seated and noticed a large block of hollowed-out parmesan cheese on a butcher-block table. After reviewing the menu, we asked about the cheese. It was for a spaghetti dish that "we wouldn't soon forget." "If we won't forget it, we have to have it," even though spaghetti is not the most adventurous thing to order in an Italian restaurant. The spaghetti is cooked and mixed with tomato sauce, then what I am guessing is hot oil is ignited and dumped into the hollowed out cheese. Then the spaghetti is added and mixed with the melted cheese, removed and served with additional shreds of hard parmesan. The result is nothing short of fantastic and I believe it when I was told Americans return every couple of years or so just to eat this dish. We also had a mozzarella and tomato salad (as if we needed additional cheese) and complimentary green and black olives. When I visited there myself in 2024, on a Sunday night, the owner was not there, but his son was and when I showed him the photo of my friends and his dad, he suggested we get a photo of the two of us. We did. Then I just was back again with my sister and brother-in-law and I showed them both those two photos and they suggested getting a new one of the three of us. We did. Now I live in California, so it's not like dropping in because I'm in the neighborhood, but this place feels like family!! They delivered a fabulous dessert for my 80th birthday. That is family! But it almost didn't happen as the place we were headed just happened to be closed for a couple weeks. Momenti seemed inviting enough but it's easy to overlook due to its location and size. So I like to judge a place by their Puttanesca. I don't know why. It's just something I've been doing for 30 years. It's simple enough just to throw all the ingredients together in a pan. But I've found it takes a bit of skill to control all the competing flavors. The saltiness of the olives and the tartness of the tomatoes really have the potential to shout down all the quieter flavors. So when I saw Momenti's incarnation of it on the menu served with swordfish of all things, I got really curious and then I got really scared. It sounded really good but it would be so easy to overcook and/or overpower the fish ... well, let's try it anyway. The first bite was an absolute delight. I could actually taste the subtle savory essence of the swordfish AND it was perfectly tender. The olives and tomatoes were present in a supporting role but the swordfish was clearly the feature. Momenti somehow managed to expertly combine and control all the flavors into a very well balanced and multi-dimensional swordfish symphony. Sorry, I have been only talking about the sauce. The homemade pasta made this meal epic. Bottom line, give Momenti a try when you're in Amsterdam. Let them recommend a nice Chianti for you from their very substantial wine list and start your meal off with the charcuterie board. Managed to get a table at the far end of the restaurant beside the bar. I've been to plenty of italian restaurants in my time and I can honestly say this was the best meal I've had in any of them.
