Dalton's belongs firmly in the third category. Ireland has no shortage of establishments willing to sell a visitor the idea of an Irish pub. Dalton's has the considerable advantage of not needing to sell the idea at all. It simply is one. Walk through the door and there is no great ceremony announcing that you have arrived somewhere authentic. There is a bar, a proper pint, conversation, music, locals who appear to know one another, and strangers who do not remain strangers for particularly long. That is quite enough. The place possesses something increasingly rare in the modern world: a personality that has not been designed by a marketing department. You do not feel like a customer being processed. You feel, rather suspiciously at first, as though you have wandered into somebody's local and nobody has yet discovered that you are not actually local. Then someone talks to you. And that settles the matter. The music deserves particular mention because it is not treated as background decoration. Traditional Irish music here feels like what it ought to be--people playing because music belongs in the room, other people listening because they want to, and the occasional voice joining in because restraint has finally been defeated by Guinness. There are establishments that spend enormous sums trying to manufacture atmosphere. Dalton's appears to have saved the money and simply acquired one naturally. The pint is properly attended to. The room has warmth. The conversation has life. And there is that wonderful Irish quality whereby an evening that was supposed to consist of "one quick drink" quietly becomes several hours of your life. This is dangerous. Not financially dangerous, necessarily. Chronologically dangerous. You enter at one hour and emerge at another with very little understanding of what happened to the intervening period, except that you enjoyed it immensely. Kinsale itself is a beautiful town and has plenty of places competing for your attention. My advice is simple: see the town, admire the harbor, eat exceptionally well--and then find your way to Dalton's. Do not arrive looking for polished tourist theatre. Arrive looking for a pub. A real one. The sort where the measure of the evening is not how fashionable the room was, but how reluctant you were to leave it. Mark Twain supposedly had opinions on nearly everything worth having an opinion about. I cannot say what he would have thought of Dalton's. But I suspect he would have ordered another pint before deciding. I certainly would. And that may be the finest recommendation I can give. Sláinte.
