Then there is a whispered name. The name that only a fortune few can have at their wedding. FEMA catering is that mythical catering company. The wedding party had picked these entrées, BBQ pork steak, cheese tortellini, and fried chicken. Sides were baked beans, mashed potatoes, corn, with pudding for dessert. The pork steak is, as all pork steak, a fatty slice of pork cooked in BBQ sauce. The piece I had was boneless but I heard other people say theirs had bone in. It was a good pork steak as long as you know what that is. I thought that it had a little too much salt either in thr steaks or the BBQ, not everyone agreed but a few people noticed it was salty. The fried chicken was good, not too greasy, the breading was crispy and the chicken was moist. Everyones favorite were the tortellini. Cheese stuffed pasta with a butter and parmesan sauce. Buffet style dinners at weddings can be tricky, too much food, not enough, does it sit out too long, but it seemed like Fema was doing a good job of keeping limes moving, and the food flowing.

They provided us menus and quotes for what we wanted. We wanted a late breakfast/brunch for the bachelorette party. We chose the biscuits with jam, "crack" bacon, scrambled eggs, and country potatoes. At first we thought our selections were too simple, but WE WERE WRONG. The "crack" bacon was the star of the show. It was the best bacon any of us ever had. We still talk about the bacon, and the breakfast as a whole. I would recommend Roberts' Ranch Catering to anyone that wants catering. What matters most to me now is how businesses handle Covid protocol and they had masks on the entire time and practice safety social distancing. The food was everything and more. The Off the Rails Bloody Mary I had wasn't good at all, with very little accoutrements and a price tag of $12. This just wasn't as good overall as I'd hoped, for the price(s).
