They recognized early that Richmond sits on a corridor of movement--Chicago flowing north toward Lake Geneva, that Midwestern analogue to the Riviera--and made a legitimate attempt to create a stop where people could sit down, slow down, and share a meal. I still remember my first visit, back when Paisano's had maybe five tables. I was seated next to none other than Dan Rostenkowski, then Speaker of the House. That moment captured something about the place: it aspired to be part of a broader, more connected world than Richmond typically experiences. The concept has always been clear--family-style, approachable Italian, positioned as a step above casual dining. And to their credit, they've maintained consistency over the years.
