Both hailing from Bogota, Colombia, the two partners own a number of restaurants both separately and together. With Tapas on Main, they brought authentic Spanish-inspired dishes to downtown Bethlehem. In February 2015, when the unit next door became available, the partners opened a French-style bistro dubbed Cachette Bistro + Creperie. With both eateries adjacent to each other, they can share the same kitchen and liquor license; it makes for easy management. Palomina serves as the executive chef for both establishments, while Luis Abundez serves as the chef de cuisine. My family and I visited Tapas on Main and Cachette Bistro + Creperie this past summer while we were visiting relatives in the area. We stopped by while exploring Main Street and it looked like a cool place to get brunch. Although we were all seated in Cachette's dining room, the staff said that we were allowed to order anything from either establishment's menu. For drinks, I ordered a "Limoncello Spritz" while my wife had a "French 75". For food, I had the "Smoked Salmon Benedict" (two poached eggs, smoked salmon, sautéed spinach, bacon crumbles and hollandaise over English muffins), my wife had the "Huevos Rancheros Crepe" (two fried eggs, chorizo, pico de Gallo, cilantro rice, black beans, jack cheese), and our sons shared the "French Toast" (fresh bananas & strawberries, maple syrup). We all really enjoyed our meal! Our extended family also enjoyed their dishes, which included the "Croque Madame" (gruyere, ham & egg sandwich, served w/ frisee & apple salad). Whether you fancy a culinary trip to Spain or France, you'll find plenty of delicious dishes at these two establishments!

However, the food was brought out as it was ready rather than all at once, which made for an odd dining experience--some people received their meals much earlier than others. It would have been better if the food arrived together so no one had to wait while others ate or risk their meal getting cold. They seem to try their best to have a cider from PA on rotation. They have a vinyl night (as in LPs) and the place is super cozy on a corner where there is a lot of parking available. The most amazing thing to me was hearing the bartender casually talking to someone and mentioning that all of their beer was gluten-reduced. Okay, what's that all about? Asking for further details, they use an enzyme to effectively drop the gluten out of the beer. It can't be called gluten-free because it comes from a gluten source. However, the amount of gluten left in the beer seems to fall below the standards for gulten content making it effectively gluten-free. Yeah, no promises from me -- or them, I believe, on that matter. I just found it fascinating with seemingly zero downside to taste! Amazing!

Our first visit to Bonn was moderately busy, but the staff took the time to answer questions, was friendly and knowledgeable, and was very attentive. Our second visit was slammed busy with a line practically out the door. I honestly didn't notice a difference or drop in service. Absolute all-stars. Beer: this place is a goldmine of English pub styles with outstanding milds and bitters. We worked our way through the tap list and couldn't find a beer that wasn't great. Parking: located next to two large parking lots (pay). Well lit. Food: none. Fuel up before you go. Atmosphere: small, quaint, but comfortable and welcoming. On our first visit, another patron at the bar told us, "I envy you...I wish I could experience this place again for the first time." It's that kind of place. You just click with the vibe and it feels good. On both visits here, we didn't want to leave. Overall: I brewed my first beer 25 years ago. I'm a certified beer judge. I've lived all over the US and traveled extensively. Not everyone is going to instantly click with this place, or fall in love with their style. I did, and I have.
