They trim the sinew perfectly and what I ended up with is even better that I have had done it myself. Those of us who know the flavor of the game is 90% related to how it's handled from the moment the harvest takes place until the minute it hits your dinner plate . Walkers butcher block (previously known as the Lebanon locker) has my complete trust now and actually saved my ass when I had to travel unexpectedly on the day I was going to process my own meat. They took in my beautiful idaho harvest (6x6) at the last minute and turned it around immediately.
