We started with the Gilda, the iconic Basque pintxo of olives, Cantabrian anchovies, and pickled guindilla peppers. It was bright, salty, and the perfect way to wake up our appetites. The Idiazabal cheese soup with quail egg was one of the most memorable dishes we had in Bilbao. Creamy, silky, and comforting, it was topped with crispy potato sticks, crunchy corn, herbs, edible flowers, and a perfectly cooked quail egg that made every spoonful rich without feeling heavy. Another favorite was the tuna served in a vintage-style sardine tin, topped with roasted red peppers. The presentation was clever, but the quality of the tuna really stood out. It was incredibly fresh, tender, and paired beautifully with the sweet peppers. We also couldn't resist the jamón Ibérico on toasted bread with grated tomato (pan con tomate). Sometimes the simplest pintxos are the best, and this one showcased just how exceptional good Iberian ham can be. Everything was beautifully presented without sacrificing flavor. As long as as it was place in my face, the pinxto was in my mouth. That said, everything thing I ate was absolutely delicious. For the concept of the restaurant, I was a bit surprised that the inside and outdoor areas were pretty empty. However, that could have been due to our late afternoon arrival to the restaurant. I do not recall seeing too many folks out and about in general. However (part two), the lack of folks worked out well for our party of seven. Hopefully, I can make another trip to El Huevo Frito during another visit to Bilboa.

They were a huge help! We ordered a few pinxtos and the lady offered to heat them up and we ate at the bar. We got 2 beers too, which we learned we could take to go. Open containers allowed, while walking around the city! And tipping is not expected. The pinxtos were ok.... but I imagine they would taste better fresh versus when we ate them, just before they closed. This pinxto bar is known for putting fried quail eggs on their pinxtos. We had a croquette, one with fried cheese and two with ham on them. They were all tasty and made my hanger go away. One of the 2 women behind the bar spoke English. We had no issues ordering (u can also order them to go). Would come back and try their food and drinks again, for sure! The bars/restaurants are small (compared to American standards)... so be prepared to squeeze and be intimate with others at the bar, when ordering. This was our first eating experience in Bilbao. Looking forward to exploring more tomorrow! This is my fiancee. He looks like he could be from here, so people come up to him and start talking Spanish..... but then they are surprised when he opens up his mouth and hears his very American and West Virginian accent.

If you want to eat close to the museum, it is convenient. But if you have the time, you may want to consider the alternatives. Which isn't to say it's bad. We came during the mid afternoon on a weekday, and a table wasn't too hard to come by, but there are only ~6 tables so if you're coming for dinner I'd definitely make a reservation. If you want to try any of the other food (pinxtos) which are already prepared and displayed across the bar, then you need to find a spot at the bar (around 6-8 stools), or be prepared to stand and eat. The local lunch crowd packed this place, and there were many people spilling outside onto the sidewalk to enjoy their pinxtos and drinks. The food and drink: Everything was amazing. The house red wine (rioja) was extremely cheap, but some of the best tasting wine we had on our trip. We sat down at a table to try the pulpo. This was the BEST pulpo (octopus) dish that we tried on our entire two week trip in Portugal and Spain - and I'd say we sampled at least 10 other places version of this dish. The presentation was great, but the texture, taste, and freshness were the true stars. After we finished the Pulpo, we headed over to the bar for more wine, and sampled some of the pinxtos at the bar. These weren't quite as memorable as the pulpo, but still very good (a crostini with foix and iberian ham stood out above the others). Although we definitely preferred the hot/cooked to order dish more, the cold pinxtos at the bar were still well above average compared to what's available at most of the other pinxtos bars in Bilbao and San Sebastian.
