Enjoyed the bbq sauce. The Mac and cheese was dry with no flavor. Definitely overcooked and dried out. Shame. I tried the cabbage side but it was not my favorite. This place felt like exactly where you want to be to get good Texas BBQ, right down to the charred pig butt on the carving board waiting to be chopped. My friend Jen, our resident Texan, had ordered food for an army so we got to taste a bunch of different stuff. The brisket was solid, flavorful and tender. The chicken skin was crisp and peppery, though the chicken was a little oily. The winner of the meats was definitely the hatch gouda sausage. It was spicy, the tubing snapped when cut, and the Gouda was smoky and oozed out when a piece was cut. I also very much liked the BBQ sauce, it was not too thick or sweet, but instead had a little kick of spice and vinegar and complimented the brisket so well. For sides we got mac and cheese, meaty cabbage, and potato salad (and pickles and onions that came with). All were solid, none totally stood out, but would eat any of them again. I generally prefer a slightly less mayo forward potato salad, but there was enough mustard to balance. The banana pudding and peach cobbler were both worth ordering. We haven't been here in several months because we hate the traffic on I-35. Nonetheless, we ventured to San Marcos today because the traffic wasn't too bad. San Marcos BBQ always has some best smoked meats in Central Texas. Their rub is a simple blend that lets the flavor of the meats to come out. Today was our lucky day because they had their pork ribs listed at $10 per pound. We ordered a pound to go so that we could enjoy them at a later date. They freeze really well and are just as tasty when you steam them hot. For lunch, I ordered the 1/4 chicken (white meat), sausage, pinto beans, and coleslaw. The chicken had a great smoke flavor and seasoned nicely. The sausage was a good size and had great flavor. I'm not sure how they cook their pinto beans, but they were extremely flavorful with a hint of smoke. The coleslaw was adequate. If you like bbq sauce like I do, they have two to select from. One is regular and the other is spicy. The spicy one has a hint of mustard. I like mixing the two to get a unique flavor. Overall, go try this place if you're in the area. The link was delicious as only barbecued Elgin sausage can be, and the smoked chicken was incredibly flavorful. The potato salad had more mayonnaise than I usually prefer in potato salad, but it was yummy enough that I kept coming back for more. The beans were also great with a lovely peppery burn. Everything you'd expect from a Texas bbq spot, but nothing to go out of your way for. My friends liked the other meats more than their brisket. I told her I wanted mixed and she rudely told me that I can't have mixed so I chose white meat. I got sweet tea as my beverage of choice. I went to get my fork,knife, straw and sauces which are served in old ketchup and mustard bottles kinda like at Two Bros. BBQ in San Antonio. My tray of food arrived quickly. I dug into my beans then coleslaw. Both were very good. They are generous with the sides portions. My chicken was small and dry. The sausage was good and spicy and didn't really need sauce. The brisket had a good smoke ring to it. I got banana pudding for dessert and it was very good. To sum it all up,the food was OK and was better than Salt Lick in Driftwood and Louie's in Buda. I'm so glad I listened to fellow yelpers regarding San Marcos BBQ because they serve the best brisket I have had so far. So tender and buttery. Perfectly seasoned and smoked. Sausage links were spiced just right. My kiddo loved their Mac n cheese. It's got a little kick to it. The Mexican rice was yummy too. Servings are generous. We had the family special no.1. It's worth it. When they say it feeds 4-6, they really mean it. This meal comes with a gallon of tea, sweet in our case or fountain drinks. We gladly took our leftovers back to our hotel. Their ribs looked amazing too. I'll have to go back and try that next. Maybe some pulled pork, chicken, turkey and dessert too. I feel like I just gained 20 lbs just talking about all their delicious food(haha). Service deserves more than 5stars. Everyone was so friendly and helpful especially Aaron, the pit master. Got the JP new which included brisket, sausage, and rib, 2 sides, bread, onion, pickles and a drink. I was not impressed. The meal was cold. I doctored the potato salad and it was pretty good. Cabbage was good. The sausage was ok. The brisket was dry and the rib was at Louis style (my favorite) but it was dry as well. May have been a bad day but it was not worth $20. read more

When I try a BBQ place for the first time, I always get the same thing - brisket, sausage, and pork ribs. This was no time to change. The folks cutting the meat answered all our questions. One of them even brought out 2 brisket for us to look at - one marbled and one lean. We placed our orders, picked it up, paid and went to find a table. The only booth left had 1 good seat and 1 in need of extensive repairs, but we made it work. The food was really good, much better (in my opinion) than Hayes County BBQ. The ribs and sausage were really good, both with and without sauce. Some of the brisket was excellent, but the slices that came from the end, were overdone and dry. Will I return? It's unfortunate that zero stars is not an option. We were on our way out of San Marcos and decided to stop here. I was very hesitant based on the outward appearance, but hoped it was a hidden hole-in-the-wall gem. It was not. The abundance of flies inside was the second . But the actual food was very disappointing. 3 meals ordered: "Dino rib" and sides; "Sebree" (1/4 Chicken,1/4 Brisket); "Sally" (1/4 Brisket,1/4 Turkey). 1. Dino rib price was based on weight, which was 70% bone. Moist, but probably due to being very fatty. Extremely bland which was surprising since they sell the rub that is supposedly used. Sauce helped give it some flavor. Potato salad and green beans were okay. At least our dog enjoyed the bone (majority of "rib") we brought home. 2. Sebree - lean brisket was ordered. White meat for chicken was requested. What was given was the tiniest little "leg" and I assume thigh? The tiny little leg had more meat than the "thigh" as the majority was bone and fat. The brisket was so dry (as well as bland), it was difficult to swallow without some sauce. Potato salad and pinto beans were okay. 3. Sally - lean brisket ordered. Dry, bland, but again, added sauce helped. Turkey and sides were okay. After spending almost $100 for 3 people for such mediocre food in both quality/quantity (being generous), we're extremely disappointed and would not recommend. I ordered brisket (dry) with smoked Turkey, loaded lacked potatoes, green beans and buttermilk pie (which I have never heard of). The Turkey had a nice smoky flavor. The brisket sure had a lot of fat on it when I ordered lean. Green beans good and the loaded mashed potatoes were fantastic. Buttermilk pie tasted like bread pudding in a crust without cinnamon.
