Again, awesome meal at Salon.
This was the menu:
1st course: Skate, Tarragon, Dandelion, Grapefruit
VEG OPTION: Romanesco broccoli, Almond Milk, Blood Orange
2nd course: Ham Broth, Slow-cooked egg, Turnip Tops
VEG OPTION: Turnip broth, Slow-cooked egg, Pickled Turnips, Wild Garlic
Main course: Swaledale Lamb, Jersey Royals, Seaweed
VEG OPTION: Cauliflower risotto, Kale, Pecans, Berkswell Cheese
Dessert: Rhubarb, Buttermilk, Roasted White Chocolate, Oats
Between the three of us, we had a mixture of the regular vs veggie options. My faves were the romanesco veggie first course option and the ham broth second course option. The ham broth in particular was the stand out. Well done to the chef for getting the stock perfectly clear. It was a great salty contrast to the pickled slices of turnip. Lovely combo!
One drawback to the menu is the skate. I didn't ask about the sustainability of their menu but a quick google search showed that skate "is assessed as Critically Endangered by IUCN - World Conservation Union and is also listed by OSPAR as a threatened and declining species" per the Marine Conservation Society. Again, not sure about their menu but definitely something to think about. read more
