We got connected to Stephen on a whim and in under a weeks notice, he catered a Friendsgiving dinner party for 7. Everything in the photos are gluten & dairy free), was transparent during grocery purchasing, and dropped everything off....including finishing the unbelievable garlic and Rosemary potatoes at our place so that they'd be extra crispy. He does weekly meal plans, caters events small & large, and is a pleasure to work with. Roaring 20s dinner parties are back in style - and we get to enjoy them knowing Stephen has us more than covered. Ps: ask about his pies. We've DEVOURED his pumpkin and bourbon chocolate pecan pies. We called Olivia after speaking with many caterers about about approach, cuisine and budget, and we were honestly getting a bit defeated. My first conversation with Olivia was so incredibly refreshing in that I told her we are trying to decide between tacos or barbeque and she responded with a very effortless, "why choose?". This immediately put me at ease as we started to brainstorm together. All other caterers were now subpar. She crafted a beautiful menu for us that included mini (single-bite) sized tacos as part of the hors d'oeuvres and an upscale barbeque with hometown roots for the entree. Our guests have not stopped RAVING about our food (strong accolades for the BBQ still rolling in from our Texas and Tennessee-native guests, so you know it was great!). We received a truly personalized experience with Olivia. She even stepped in to work with us directly when we had questions and get saleswoman was unavailable! BUT, after a peaceful encounter with "The Essence of Emeril" this afternoon, I can confirm that EL is the quintessential food world star. What I admire most about Emeril (and what sealed that 5th star) is that his shows and his on-air delivery continue to impress the genesis of cooking shows: Cooking Instruction! (Are you listening Bobby Flay?) Within 20 seconds of airtime w. Emeril I learned how to tell Reggiano from a knock-off hard=cheese (check the rind), why using fry oil again makes food dark (oil composition has broken down) and the best time to season fried food (straight from the fryer as it drains). It may have been LESS than 20 seconds! All the while, Emeril offers stellar food presentation (if not a bit stylishly sloppy), intriguing recipes (much more complex than Everyday Italian with an increasingly diverse flavour base though he can't give up signature 'essence' spice-- BAM!) and a True Passion for food and cooking. He's light years away from the obnoxious, balding, wannabe Paul Prudhomme Food Network lackey by proving himself with Substance-- a comforting thought in this era of market-driven celebrity chef-dom. When signing us up, I mentioned in a note that her dream is to become a chef. The class included seven or eight adults and us, and Chef Paul went out of his way to make her feel welcome. He took her under his wing, showing her basic techniques and treating her aspirations with such respect that she felt truly seen and encouraged. We arrived early, and Chef Paul shared that he began cooking in a professional kitchen around the same age as my niece, then apprenticed under a famous chef in Paris at 15. He later became the head chef of two restaurants before opening his own culinary studio. The class focused on French cooking and included a four-course meal. I loved that it was small and intimate--just 10 people--compared to other classes I found that had 16 to 20 participants. Although we worked in groups of four to prepare each dish, Chef Paul brought everyone together where he demonstrated key steps across all the courses--techniques that many cooks get wrong--and showed us how to do them for the best results. He even provided special recipes for us to take home and ensured that each student got hands-on experience with parts of multiple dishes. It truly felt like a shared and collaborative learning experience. By the end of the three-hour class, our class of nine or ten had shared a delicious meal and great conversation. My niece was absolutely thrilled and left even more inspired to pursue her dream. If you have a child who loves cooking, I can't recommend Chef Paul highly enough. He even offers children's group classes upon request. Thank you, Chef Paul, for such a warm, generous, and unforgettable experience!
