I had bookmarked it the night before. Sure enough, it was open. The gentleman cooking up the hotdogs was really nice, and he said his favorite is the andouille. I asked him which one has the best snap, and he said, the andouille. I'm Texan, so I care about the snap. I got the andouille. This sausage is something else. It has serious snap, the perfect touch of spice, the right amount of flavor, and definitely isn't overly salty. I think it really is the best hotdog I've ever had. Another gentleman who came just after me got the brisket dog. I might have to go back for this. So get out there at 10 PM and experience this thing. So delicious. So worth breaking your keto, intermittent fasting, nighttime eating ban, you name it.

My friend got rice and vegetables with no meat because they had no vegan options and they charged her full price $16.00 for rice and veggies. They called my fries potato sticks and I got 3 of them. Owners Jeremiah and Anna Luce and kids traveled across the country from Maryland in a school bus converted into a cafe. There are 100-year-old church pews for seating, funky decor with license plates lining the ceiling and vinyl records on the walls. Jam band music plays while you eat (we listened to Jack Johnson, Phish and some reggae while noshing). Not only is it a traveling cafe, but it runs on vegetable oil and solar power. They don't stop there with the eco-love. They are also involved in a meal for a meal, food sharing program. When you buy a meal they buy one for someone else in a third world country. They think outside the box when it comes to services, like catering. They offer to cater mountain trips and festivals, or are willing to drive you around pub hopping, calling it a "veggie-powered taxi restaurant service." They are also willing to do public speaking and demonstrations on using vegetable oil as fuel and other socially-aware business practices. While eating here, I got the warm fuzzies. I totally support them and wish there were more cafes/restaurants/food carts like this in Fort Collins. It's just a happy place to me and they are doing exceptionally good things. If they upped the ante and increased the creativity and quality of the food, they would be out of this world.

They gave me a buzzer to take with me and a few minutes later, I was back at my table with a hefty meal. The shishito peppers were deliciously blistered and tender, with a lemony aioli accompaniment. The tacos were good, but a little bit lacking in the flavor I've come to expect from these trucks. The karaage cauliflower though.... HOT DAMN. They're very oily, but the Szechuan pepper chili sauce was wonderfully numbing to the tongue and jumping out with flavor. I would've gotten another serving if I wasn't so stuffed. Highly recommend giving this truck a try since they have a fun rotating menu and speedy service!

Known for their cheesesteaks and loaded fries, I opted for an order of the Andy Chuck's Steak Tots which featured seasoned grilled steak, peppers, onions stacked on top of 1/2 lb of tots (fries or chips are also available) smothered with melted cheese. What's not to love? After discovering they were out of fries and tots, we settle on the same order, but over chips. What I did not expect was tortilla chips, creating more of a cheesesteak nachos style, but the chips made for a good crunch and not the typical soggy mess that tends to happen with smothered fries or tots. I was a little disappointed in the steak and cheese though, as the steak was chopped fine with the consistency of ground beef and the cheese wasn't freshly melted cheese, but more of a queso base cheese. Portion was pretty small for $12, but gave us just the amount of light sustenance we needed before making our way to another brewery. When stumbling upon this truck again, I think I'll stick to trying one of their sandwiches.

Wow the fries were so flavorful! They season the fries with cracked pepper and seasoned salt, and it's amazing. The Nashville chicken sandwich was delicious, right amount of spice and coleslaw. We received our food in less then ten minutes, and the owner delivered it to us. We will be ordering from them again asap!
