I went with one each of the carne asada, carnita, and tripa tacos, and washed it down with a pineapple agua fresca. The street tacos are $3 each, and you get small tacos with two corn tortillas. They are, however, generously filled. They have one red salsa that is pretty spicy but manageable. No mystery meat here, each one was very identifiable. The carne asada had great flavor, the carnitas were very tender, and the tripa had that earthy flavor you would expect. The agua fresca was generous (24 oz) but a bit watery. Inflation bites. The meal was $15 including the agua fresca and tax. Service was polite and effective. I've been watching the place for a few weeks and it seems to be consistently open, and I've seen a sign saying they are open as early as 6am, so if you stop in it should be available. Their social game is not strong--can't find it on any social media. A decent choice if you're hungry, but they might have to up their game to compete with Fatima's Pupusas and Snacks up the road.

But the salesman was young and raved about the ribeye tacos. When we walked, in the light rain, to the truck that had just pulled up, we asked about the menu. The owner hadnt had time to put it out. There was a short menu, with a combination of Mexican and Vietnamese options. We talked up the owner and he told us that he,hispanic, and his wife,Vietnamese, did this part-time on Saturday & Sundays. The food was authentically made by people who had eaten and cooked it their whole lives. As we waited for our food, they cook to order, a line quickly formed and it appeared people drove over just to buy from Ray's. The customers were quiet, orderly and patiently waited to place and receive their orders. Although we wanted to try the Vietnamese sandwich, because it was our first time, we opted for 4 tacos, 3 ribeye and 1 fish, at $1.50 each. We got in our truck and drove the half mile to an electronics store. Before we went in, we took a bite of our tacos and OMG, M-A-G-I-C. The ribeye fajita tacos would make you slap somebody. They were moist, seasoned and just enough cheese to make you beg for more. The fish taco was good, but maybe needed a little more salt. The plate of tacos came with a small hot sauce, a guacamole and another salsa. We didn't leave our truck until they were gone. We were wiping the crumbs from our faces as we walked into the electronics store. While searching for a printer, our conversation easily transitioned to how many tacos we were getting to take home, 9 or 12. We calmed down and opted for 6 with extra cheese. The rain had picked up and as we sat in our truck, Ray brought us our order, not part of the service. We raved to him about how great his food was and got his number to call in the future to locate the truck. This is definitely a food truck that I will visit again and I thought the world should know, how truly AMAZING Ray's Amazing Kitchen is.

I wanted to have some elote (corn in a cup) but they didn't have it, which was slightly disappointing. The tacos were both very good--the meat was tender and flavorful, and served with lime to add some zest. The green salsa was quite tasty. What stands out--the tacos are served very hot! It's hard to pick them up if you try to eat them right away. They would travel quite well. The aguapanela was excellent--in case you haven't had it, it is a drink made with cane sugar and lime juice. It's very refreshing and a great complement to Tex-Mex food. The whole meal was only $8.50, so it's a bargain also. But it's cash only, so bring your bills.
