We could not recommend this pizza truck more! I would give them 1000 stars if I could! They drove a couple of hours out to Shoshone, Idaho, to cater our wedding, and they were truly one of the best teams we could have had as part of our special day. From the very beginning, he was fantastic to work with, super friendly, professional, accommodating, and just an all-around great person. On our wedding day, the entire team was incredibly efficient, and our guests were absolutely blown away by the pizza! They also brought their complete own set up for displaying and serving the pizzas! I am not exaggerating when I say everyone was talking about how good it was. By the end of the night, he had around 30 extra pizzas, and people were lining up to take pizzas home because they were that good! We received so many compliments from our guests, and I think the pizza may have been one of the biggest hits of the entire night. We are so grateful that they were willing to travel all the way out for our wedding and be such an amazing part of our day. We truly couldn't have been happier with the experience, and we cannot wait to make it a tradition to visit the pizza truck every time we come through Mountain Home! We rented Red Ember Pizza for our wedding and all I can say is WOW! The food was amazing! He makes his own sourdough crust that is top notch quality. The options included classic options like pepperoni or cheese pizza plus some specialty pizzas he put some unique twist on like the El Diablo(my favorite) and the pesto(second favorite). He brought his own set up for serving and was quick pushing out pizzas. He was very professional, super easy to work with and had the appropriate amount of help for a larger than we thought wedding. There wasn't a single guest that was disappointed. Every single person raved to us about how good the food was! I couldn't recommend them more and you better believe we will be 100% using them again for events or just to eat out in town! read more

Stopped by this brick oven food truck. We loved it!! Super fresh ingredients. You can pick one of their specialty pies and add go from there. Amazing thin crust pizza. Saw some posts the last few days about this place being open. I was so excited to try it I got there as soon as they opened today at 10am. I wasn't the only one either there was already people showing up and when I left more were coming to get some pizza as well. I can see why they are busy and well liked. The couple that runs it is sweet and amazing. I tried the special and also got a pepperoni cause I mean it's the best way to tell if pizza is legit good or maybe I'm just obsessed with pepperoni. Anyways this pizza is awesome! Crust was perfect had a little crunch but mostly chewy which I appreciate. The pizzas were perfectly cooked and the sauce is phenomenal. Ok...naturally fermented sourdough pizza! You can't get this anywhere else not unless you flew to Italy! They use Italian flour, fermented the dough for 20+ hours (no commercial yeast) and then cook it in a wood fired oven inside a food truck! Really read pizza. I love the pesto and the goat pizza with pear! It's truly artisan! If your driving through mountain home on a weekend they are open it's definitely worth the time to stop. read more

So I have been dying to try this pizza truck since I first heard about it several months back! Well they are hard to track down but today I knew just where they would be! So I went and I went with a group! The truck itself looks clean and new, so that's great. They have some hoola hoop girls that dance around out front. Also great! A variety of pizzas, yes great! The pizza, oh darn... Like I said, I was with a group and there were a few kinds of pizza ordered. My issue with all of them is that they are wet! Like a weird kind of under-done wetness. Also the red sauce is a little bland. The crust is amazing besides the wetness and I reallly think you guys are on to something here! Just a couple of tweaks and you'll nail it I will try again to see if you perfect your methods!! read more

This pizza is delicious! It is Neapolitan style, so it's different than typical pizza chains. The ingredients are super fresh. The naturally fermented dough was easier to... uh... digest than most pizzas. Mountain Home needs more food like this place! read more

think it's important everyone knows this style pizza is soupy :) i personally love it and know without a doubt others who are familiar with this style of pizza do too and would be disappointed with anything but "wet" I copied this from a article online about this style pizza: If you've truly never had this style of pizza, prepare yourself for the fact that it might be what you would term "soggy." The liquid from the sauce and cheese tend to create a hot, soupy, molten area at the center of the pizza. For some reason that I have never understood and probably never will -- it is a cultural barrier I have come to accept -- Neapolitans seem to like their pizzas with this "wet" center. That means that in some of the more "authentic" Neapolitan pizzerias, you might not even be able to pick it up. You'll have to use a knife and fork. "Why can't they just make it crisper?" you ask. A Neapolitan would counter with, "Why can't you just eat it as is?" (And that would be the polite response. ;) read more
