Without a doubt, when we have a unique opportunity to experience meals that are crafted with so much precision, it is a very fortunate experience. Ramon, a descendant of a Michelin starred chef and a grandson of bakers, shows the talents at this sensational establishment in Madrid. Arriving for a lunch tasting, the space is stunningly appointed and filled with light. Immediately, the platters and silverware here stand out with beauty, before the initial courses even arrive. Without a doubt, even amongst Michelin starred restaurants, the platters and silverware here is of unparalleled quality and beauty. The experience is very special and extensive, with a couple options offered based on the number of courses. It is hard to imagine how a human being can consume the larger course offered, so clearly Spaniards must eat some hefty meals. A couple favorites from the menu were the sea urchin purée and garden of bon bons from foie gras, apple and eel. Presentations were spectacular and the tastes are there to match. Unique, beautiful combinations. Strew of macerated chicken oysters was one of the heavier dishes, but also spectacular and rich. Mushrooms with shaved truffles and crispy duck were also amazing dishes. The only disappointing dish was the venison and for two primary reasons. First of all, it came as one of the last courses before dessert, the moment at which we tend to already be quite full. The second, is it was just extremely heavy preparation and a bit overwhelming in added butter and red wine flavors. It was for a certain taste. Wonderful desserts followed, but with those courses also would expect a bit more creativity in both presentation and preparation. Despite these fairly minor nuances, as a whole the tasting menu was phenomenal and included many one of a kind dish ideas that were as creative as they were delicious. With amazing service and design, the only area aside from food where the restaurant was falling just a bit short was the restroom, which was running out of basic amenities and that's just a bit of an inconvenience at a restaurant of this caliber. Overall, an amazing establishment with wonderful service and dishes. Having a chance to meet Ramon personally was also a humbling experience.

It is easy to feel spoiled and pampered at Ramon Freixa in Madrid. The restaurant space itself is small and intimate, and Ramon himself likes to introduce himself to every table, asking about preferences and allergies. The seating is comfortable (couches for everyone!) and makes you feel like you're visiting his home and he is about to cook you a great meal. We chose the 20 moments tasting menu, which was MORE than enough (we actually couldn't finish all the dessert moments at the very end, so they graciously packaged some desserts for us. The highlights of the meal were definitely the "mimetic stone", which was essentially a truffled bomb of flavor, one of the starters that you get. Peach bellini was delicious. My favorite main was the large prawn. The weaker elements were definitely the fish moment (I couldn't finish it because it was too fishy for me) and the desserts (nothing really stood out, and they just felt heavy and overly sweet). Perhaps it's just because there were SO many moments that it was a little overwhelming and my palate was getting numb at the end. Overall, the space is beautiful and it meal started off really nicely, although there were some misses along the way.

I sure hope the Michelin folks have a look at this. This place is 3 star all the way. Hospitality, decor, service, food quality and creativity, ambiance, tableware, attention to detail, efficiency and much more. It is well worth going out of your way to visit here. The menu is another attraction. You can order ala carte or tasting menus. Lunch "short menu" is a bargain! Comparing to Lasarte in Barcelona which I recently visited RFM is their equal. As a matter of fact they even have one of the service plates used in common.

Can't remember the name of the app but it's a smoked fish on the bottom and not bread

A 1 Michelin star restaurant experience in my mind. The apps were creative and most were delicious but the entree fell flat. I had the suckling pig for entree and it was too salty. The price was too high for the experience though the interior was nicely decorated and the service was exceptional. In summary: -3 stars for food -4 stars for service -went with 3 stars due to the price I paid and not being blown away with the food

With a decently sized menu, there will be no shortage of dishes to try. We elected to go for some Spanish classics and their featured dishes, which included their Creamy Rice with Lobster, Traditional Tripe Stew, and Aged Beer Rib-eye. The creamy rice with lobster is essentially a risotto, with the rice being cooked al dente. While the texture is nice, because of the smaller portion of lobster and the lack of flavor, by the end it feels like you're just left with a bowl of undercooked rice. The traditional tripe stew was quite good, with the beef being extremely tender and chewy. The rib-eye itself was a large cut, however, a good portion of the meat is fat. Additionally, it's only seasoned with a light touch of salt, so at the end of the day also lacking a bit. If you want to come to El Pimiento Verde, it's primarily for the ambience. The food itself is fine, though nothing to call home about. If you're short on time and looking for places to experience Spanish cuisine, this is probably one restaurant that can be skipped.

My travel companion, who booked this, did not tell me the name of the restaurant beforehand. I was completely in the dark. Upon walking into the restaurant at 8:30pm, when they open, we were the first ones there, and were presented with a menu. So........ La Tasqueria's specialty is, erm, offal (this is more punny if you pronounce offal as "awful", since I'm not sure exactly how to pronounce this...). All offal. This was a surprise to all (there was not adequate research done beforehand, apparently). Now, I do love me some tongue (and the tongue appetizer they had was amazing)....and the pate from the tasting menu was one of the best things I've ever had. This was just...unexpected. And totally on us for not realizing. But we figured, what the hell, they specialize in offal, it must be offal-ly good. And it really was. The tasting menu was 4-5 dishes, and like I said, the pate was one of the best things I had ever put in my mouth. I could eat that all day. There was also sweetbread, which I thought at first was brain, but turns out it's throat glands (like, thyroid). This was delicious as well.....but I'll admit, we both had a hard time psychologically getting over the fact that it was...offal. The last dish was a stew made of cheeks (I can't remember if it was sheep or cow or pork), and this was my biggest regret -- I was SO full I could only take a few bites, because it was so heavy, but the stew was hot and flavorful and sticky, and just, delicious. I wish I had the stomach for it. They also had a cheese dish (we ended up taking home the cheese) and dessert. All in all, a really interesting and unique experience! Service was great. You won't find much in terms of elaborate dishes here. O'Grelo is all about the fresh catch itself. We loved it so much we went two nights in a row. Over those visits we bulldozed our way through oysters, sea urchin, carabinero prawns, langoustines, razor clams, percebes, and a handful of other crustacean curiosities I couldn't even name before this meal, "slipper lobsters" among them. Many of the species on offer were new to me, yet every plate arrived pristine and delicious, proof that ingredient quality and careful handling do most of the talking here. In a city spoiled for extraordinary food, O'Grello still stands out. It's un-touristed, fairly priced for the caliber, and run with care. Not too cartoonish, just the proper decor to make you feel in the Spanish traditional mood. We started with the Steak Tartar de Bellota sobre tuétano asado a la brasa, a bold yet well-balanced dish. The beef was fresh, finely cut, and seasoned with precision, allowing the quality of the meat to shine. The roasted bone marrow added depth and richness without overwhelming the tartare, and the toasted bread on the side brought crunch to each bite. One of the highlights and favorites was the Arroz meloso de la huerta, cooked with coconut milk. Creamy and aromatic, the rice had a smooth, comforting texture with a subtle coconut note that added more flavor rather than sweetness. The vegetables brought freshness and balance, making it easy to see why this is a favorite of the head chef, especially when paired with a glass of ICENI, Vino de la Tierra de Cádiz, which sparks aromatic notes to this recipe. Another standout was the Puntillitas de Isla Cristina con Parmentier de Trufa y Huevo Frito. An Andalucian authentic dish. The puntillitas were crispy and perfectly cooked. The truffled parmentier added richness, while the fried egg blends everything. To accompany the meal, the marinated olives were a simple nice add-on. Service is well delivered. Overall, Triana delivers a confident and reliable dining experience. A traditional not too pretentious spot to bring friends coming from abroad with no unnecessary theatrics. There was also a creamy dressing on the dish that brought together the creaminess of the avocado with the bright flavors of the seafood. Next, we had the "false risotto" with little chopped up pieces of shrimp, squid, and plankton--the dish was warming and delicious with deep seafood flavors (better than the tourist paella found all over Madrid), though the rice seemed a little bit underdone to me. Both of these were great dishes, and great discoveries, though they were a little bit pricey for the relatively small portion sizes.
