Still family owned in the town of Baiersbronn, an area many rightfully consider the epicenter of German fine dining thanks to Schwarzwaldstube as well as Bareiss, it is from on-site parking that guests will find the resort spread across several acres, the Restaurants inside a large lodge and Dorfstuben immediately right from the main entrance. Intended to be casual, most diners guests of the resort and all fluent in German, it was after procuring English menus including a daily prix-fixe that decisions were made, one guest opting for Riesling that costs as much as Mineral Water and a large basket of warm Bread soon arriving along with crisp Radishes, Herb Cream and chunky Pork Spread. Featuring seasonal items as well Dorfstuben Classics and "Regional Specialties," the latter sections comprising the entirety of lunch, it was not long before an Appetizer titled "Dorfstuben Snack" arrived, house-cured Ham outpacing anything called "Black Forest" prior while Blood Sausage, Liverwurst and Head Cheese all battled for top billing with slices of a garlicky Link not far behind. Rejuvinating the palate with housemade Pickles between bites, the Corn and Apple particularly memorable, it was with plates clear and service ware reset that Mains were presented, the sweet and sour Tripe perfectly cleaned and cooked to contrast crispy Potatoes while an entirely different style of Schnitzel saw Veal pan-seared in Cream Sauce with rich Egg Noodles and sautéed Mushrooms helping to rein in the saltiness. Remaining rustic for Dessert, three-bite Doughnuts with Apples suspended in what eats like tempura-Brioche remarkably light and entirely oilless, there was simply no denying Rhubarb Strudel its place on the table and with sharp acidity finding balance in Butter, Sugar and Yogurt Ice Cream the plate as a whole ranks amongst the best dishes tasted during eight days in Germany.

I haven't been to a Michelin-starred restaurant in a very long time and I have never been to one alone, but it was still a lovely experience. The staff was very attentive, kind, and knowledgeable. The food was inventive and enjoyable, though I admit I had a hard time understanding the waitstaff sometimes, so I wasn't always sure what I was eating, but luckily I'm willing to eat anything. I had the discovery menu (appetizer, fish, entree, dessert), 3-course wine pairing, coffee, and the restaurant's "extras" which included some very tasty amuse bouche at the beginning, small desserts with the coffee, and even a cookie to take a home. I did not order from the cheese cart, but it was fun to watch it wheeled out for others. For a Michelin restaurant, I found it very reasonably priced and accessible, though I'm not sure I can say I was completely blown away by the food (wine was fantastic, though). But I did see the crocodile! Which is where the restaurant gets it's name: in the 1800s a sailor came back from Egypt with a stuffed crocodile and had the bright idea to use it as a marketing (who wouldn't want to see a stuffed crocodile?!?)

I don't know if it's the primacy effect, but I loved the first course. It was like a little egg soup dish. So warm and hearty, it was just comforting. Everything else was good too, but the cheese was a major highlight for me. The waiter selected a sampling of cheeses for us from a huge cheese cart. It was fun to watch and see all the cheeses on display.

We cleaned our entire plate and were tempted to lick them clean. We ordered the beef tartare for the starter and we probably had the same euphoric reaction a Lion would biting down on on some caribou. Our meal began with a lentil horseradish soup. Not everyone enjoyed it, but I thought it was great. The other appetizer was an Allgäu mountain cheese. It had unique flavor and was good. The main course was a beef filet that had been cooked for 48 hours topped with sliced mushrooms over a delicious sauerkraut. This included a roasted dumpling (Knödel) which tasted a bit like flavorful bread or croutons pressed into a form. A little cranberry-sunflower seed sauce on the side gave this a very nice variety and flavor. The dessert was a braised apple Belgium waffle topped with a caramelized almond and chocolate-orange ice cream liquor. It was fantastic! I usually don't eat sugar or gluten, but I did for this. Excellent! My favorite wine of the evening was the 2018 Pinot Noir "Reserve" dry from the Philipp Kuhn Winery. This wine was wonderful and caused no headaches later. As for my appetizer I got the veal calf that was lightly fried and it melted in my mouth. For my main dish I got the duck for two people. The host was a little confused by my order but I assured him I understood and wanted to order it anyways. The first duck dish was cooked to perfection. Four duck breast perfectly rendered and crisp. It came with a bread dumpling called a knodel that was amazing. My second duck dish was two legs of the duck. These were a tad overcooked but still delicious. I was not a fan of what I thought was a pumpkin mash. To finish the meal I got the plum muffin with salted caramel ice cream. This dish stole the show! Overall my mom and I loved the experience and I can't wait to bring my wife for a date night.
