Every dish tasted fresh, flavorful, and clearly made with quality ingredients. Service was fabulous! Started with their house-made guacamole & pico de gallo, which were both super fresh and the perfect way to kick things off. I also tried the elote, which was packed with flavor, and the fish taco, which was light, fresh, and absolutely delicious. The King Taco was another standout, and I really loved the queso birria taco; so rich, flavorful, and exactly what you want from a great birria taco. And you can't leave without trying their horchata, which was the perfect refreshing drink to go with all the food. I also had the opportunity to try their Baja fish taco which was another stand out for me! The fish was light, the Baja sauce was so flavorful and delish! What makes this spot even more unique is that their locations are actually inside QuickStop gas station market, which makes it such an unexpected gem. Their first location started near the King of Prussia area, and they now have a few locations in the area; including this one in Collegeville. My only critique is this - When working with vegan cheese - especially shredded, let it sit at room temperature before popping it in the oven. By doing this, you avoid the 'matchstick' look on the pizza. What happens is that the vegan cheese going from cold to hot is too extreme so it doesn't melt, or spread out - it essentially cooks / burns in place. Having worked with vegan cheese companies over the years, there is a misconception that it is bad to leave the vegan cheese outside on the countertop - not really, it's not cheese. I devoured my pizza and appreciated having a vegan option besides fries and a veggie medley.
