They bring curtido to the table in a jar (cool, no problem), but when we were done, I noticed they take whatever is left and dump it back into a big container in the back to reuse. That means it's basically being shared between multiple tables. I'm not trying to be dramatic, but that's just not sanitary. Once food hits a table, it shouldn't be going back into circulation.
