But for a cohesive four-course menu, it might have been nice to have something else. There's more to Finnish food than salmon soup. Another thing: bread was a bit weird. The portions were small and they seemed to compensate with the biggest pieces of bread I've ever seen, which looked more like American white bread than like anything Finnish. The chefs, in their t-shirts, baseball caps and aprons, are quite visible, working in the partially open kitchen, and assisting the servers with plate présentation.
