Wow! Just, simply, WOW! Great burgers; great fries; great salads; great desserts; great service. Pig's Pearls is definitely added to our "most favored restaurants" list. I had the chimichurri burger and it was -- without qualification -- the best chimichurri burger I've ever had. The meat was cooked exactly medium-rare as I'd ordered it; the chimichurri has powerful, but didn't overwhelm the delicious flavor of the beef. the "caramelized" onions weren't over-cooked; they were sauteed only until translucent, but at the peak of sweetness. The bun was soft and airy. (If I'm honest, it might have benefitted from being slightly more toasted, but a lot of that's my fault for ordering a medium rare burger that was as juicy as this one was.) My wife had the bacon cheeseburger and was just as impressive; the toppings were all garden fresh and the highest quality. And those fries.... YUM! Cooked perfectly and lightly seasoned with a spice mix.... I could go for a bucket of those anytime! They are accompanied with four ramekins of different house-made "sauces": Chili sauce, Ketchup, Mustard, and a mystery "Dill" sauce. We shared an Ensalada de Tomates that was, essentially, a caprese salad: Fresh tomatoes; house-made (!) ricotta, fresh basil and -- this was a new twist -- a drizzle of pureed black olives. It was phenomenal. And, to top it off, we split an apple tartlet that was unforgettable. House-made everything. The crumble on top melted in one's mouth; the crust was reminiscent of shortbread, the apple filling was jammy and sweetened perfectly. Overall, Five Stars is barely enough to describe our experience. I described the experience to a friend as, "Imagine a gourmet burger place, but without any pretension." I've been to Pig's Pearls several times and I like the casual atmosphere and the friendly staff. The food is always pretty good, and I once had one of my favorite things I've ever eaten there (la tarta de maracuya) which I believe they've sadly removed from menu. I'm fron San Diego and visit Guadalajara for business every few weeks and on this visit I was craving a local burger and beer. THIS IS THE SPOT. I had the crab appetizers with a local Guadalajara west coast style beer and it was perfect. Also I have to say how amazing Oscar the waiter was. How can you describe something like this? The best burgers in town. You must try it so you at know what I am talking about. Price? They could ask for more and still I will be going there.
