Came here by recommendation of a friend and this place really hit the spot. Loved how spacious the seating area was and the order upfront method is quite efficient. I went to grab a seat with the little guy while my husband ordered and one of the waitstaff was thoughtful enough to grab a high chair for me. I got a pho combo with brisket and short rib and hubby got a vermicelli bowl. They barely had any brisket in there but they did give me three short ribs. The short ribs unfortunately just don't have as much meat on them but the flavor of the broth was great~ not overwhelmingly salty like a lot of places and I think they either don't use or use less msg since we don't feel super groggy after like we normally would with soupy dishes loaded with msg. It's obvious they didn't expect a crowd the first thing on their grand opening day (which actually became more of a soft opening shortly). Seated patrons have been waiting for a while with their menus still open hoping to order and people outside have added their names to the wait list BUT there's practically no sign of front of house except for one person running back and forth into the kitchen. Here and there, it's fun observing various kitchen staff jog out with orders to the tables or fulfill to-go orders and keeping up with what is probably going to be their new norm. They are after all the only Vietnamese restaurant in Watsonville and a scene like this becomes a solid learning curve for streamlining their business model towards future success. After being initially slammed and backed up completely (with some to-go patrons outside having waited more than 40 minutes before coming inside to address the delay), they changed their dine-in for today to Pho only, which is absolutely acceptable since that's their name (and obviously mainstay). So I patiently waited for the food to come as it is obvious they are trying their best and maintaining the best attitude throughout the process. After all, as mentioned earlier, it's a hard learning curve for them that will guide their capabilities in a future ever busy and demanding environment. Now for the most important aspect to every review. How was their mainstay? It needs a little more work and as I now see this as a soft opening day, I'll have to come back another day and order significantly more of their menu when available. Their broth has an oily film and is rather light on the flavor depth. It sure needs a tad more salt too. Aside from this, they have a lot of potential for growth and as the only Viet restaurant in Watsonville - represent! 4 stars for now until the next visit. See you all soon. read more

This is my go-to restaurant whenever I am getting takeout food. They prepare your meal exceptionally fast and still tend to all the customers. I always enjoy the perfectly made boba tea, the home-like feeling of their soups, and beautiful interior design. Based on the reviews I ordered the #47 spicy beef noodle soup and didn't need to ask for extra beef, because it came with plenty. Happened upon this place after beach camping and hungry for some pho. The outside is typical and upon walking into the restaurant there are three kiosks to order. There were so many options and can be overwhelming. Paid with Apple Pay and grabbed a number and sat down for dine-in. It was convenient to order. The prices are about $5 more than what I'm used to paying (from Fresno, CA). I had the spicy beef pho it was delicious I did not have to add any additional flavor seasoning other than throwing in the bean sprouts and basil leaves. The boba drinks were excellent. I especially like how the broth is flavorful but not too salty. To-go orders also keep broth separate from veggies and noodles to keep stuff from getting overcooked. So why not a full 5 stars? My daughter and I ordered the BBQ pork and tofu bahn mi sandwiches. They were perfection. The bread was perfectly crunchy on the outside while still being pillowy soft on the inside. The pork was tender and sliced thinly enough so that nothing was hanging out after each bite. The tofu was light and crispy. We also ordered boba teas, which were delicious. I'm from out of town but was craving pho so I looked up some places around Monterey and found this place with pretty good stars that's why I decided to drive half an hour to try it. First off, the ordering was easy enough. The place is cute and small. But, the lack of condiments on the table was something I'm not used to in pho shops. The pho I got was the #25 I think? The combination with meatballs. I was expecting a little of everything but my pho was missing tripe. Had to ask for chili oil and my request for extra lemons while ordering at the kiosk was ignored as I only got one wedge. Wish they gave out more jalapeños with their veggies but at last, I only got to eat all my pho with four slices of fresh jalapeños. I was having a crazy craving for pho on a cold annd rainy day this week and turned to my fellow yelpers for their recommendations. Walked in to find a few tables with patrons and employees in the back end of the building who saw me walk in however didn't acknowledge me. I proceeded to review the menu on the wall and read to order I needed to use one of three kiosks. I proceeded to order the combination #25 and a light iced tea. I quickly set up a number at my table and proceeded to their restroom to wash my hands. As soon as I approached my table an employee approached me with a bowl asking if this is where I was sitting. I looked up at him and thanked him for bringing my food and he walked off. A female employee quickly walked over with the sauces and utensils. At this point I was excited to have been served so quickly. I doctored up my pho with lots of hoisin and hot sauce along with basil and sprouts only to still find it still needed more oomph. I requested more lemon and a chili oil to help me add just the right touch. As soon as I started mixing it all up I realized the noodle to meat and broth ratio was just not there. I'm used to more noodles and more than two pieces of each protein. My iced tea was the last item to arrive at my table and had more ice than tea although I had clearly requested light ice. I have to say for the price I paid I expected the food to be better along with the portion.
