This is in many ways the best and tastiest food you can get in Trondheim. And yes, I've been to Credo, Emilies, et al., and they're all really good, but they've never amazed me as much as this place keeps doing. This is casual and the menu is not very big (and changes neither very often nor by very much), but they found something they're extremely good at and perfected to an incredible extent. I can't think of a single thing I'd change here. Most of the food they serve has traces of traditional Scandinavian cuisine, some Mediterranean and Arab influences, and a good dose of east Asian flavors. That might sound messy, but it's not -- the flavors are really well balanced. As much as I eat here, they still manage to surprise me with their creativity while still maintaining a sufficient sense of familiar flavors. The food is also really healthy and they use a lot of local organic ingredients. I tend to prefer the dinner over the lunch (get the dinner of the day), but the lunch is also very good. It's also very cheap, and they offer takeout. This is probably not the best vegetarian restaurant in the world, but that's easy to forget when you're here and feeling blissful, and I'd say Persilleriet easily holds its own against more famous vegetarian restaurants like Leaf (Boulder, CO) or Candle 79 (NYC).
