We got 2 of the pastor, carnitas, and steak tacos ($3.5 per taco), chips and guac ($8) and it was all just okay. The meat had grill marks and what looked like lots of seasoning but was mostly gristly and flavorless. The salsa was watered down and had no spice to it. The guac was probably the only highlight of the meal. As other reviewers have started, the man at the register was not friendly and even chastised us for mistakenly thinking our order was ready after we walked up thinking he had called our order in Spanish. The establishment is in a strip mall that shares a space with a daycare, walking into what feels like a gymnasium, the dining room is dark and has an odd vibe with tables sparsely spread out in a large space. There are many places that serve tacos in the vicinity so we'll likely go somewhere else next time we are in the area.

This was a great find! I happened to drive by this place late at night while I was at work, and it seemed an odd place for a restaurant... it's a bit in a more industrial area with not a ton of retail type businesses. Sure enough, I googled it and discovered it is indeed a taco haven just off of Fish Hatchery Rd. I was finally able to stop by and experience the yumminess that is Paco's Taco's! I ordered three chicken taco's and they were delicious. Adequate filling in the tacos with meat and various good stuff, to include avocado! A rare find, anything that comes standard with avocado gets mad props in my book! These are among some of my favorite tacos I've had in the area, and I would definitely recommend checking it out. The tacos came with refried beans and rice on the side. I don't like refried beans period, and the rice wasn't super flavorful but oh well. I wish I'd had the option to just do a la carte tacos and save the few bucks, but I couldn't find the option on the online menu ordering. The space itself was HUGE, so if you're looking to dine in you should have no problem with social distancing yourself.

This is my new favorite Mexican restaurant. We went here for taco hopping on national taco day. We went to 4 places, and Paco's Tacos was our favorite. We got 5 tacos: cecina, cabeza, barbacoa, lengua and asada. I got the lengua taco at 2 other restaurants that same day. And the lengua here was by far the best. Our favorite was the cecina. It was perfectly salted and packed with flavor. All the meat here was so perfectly cooked with flavor and tenderness. The corn tortilla was warm and fresh. Not dry at all. What separates a good taco from a great taco is the tortilla and Paco's Tacos did not dosappoint. The salsa: perfect consistency. Not too liquidy but not just all chunks. Had the perfect acidity to balance out the taco. Service was exceptional. All around good people. Make it out to this restaurant. Well worth it!

Went here for the first time. I was a bit apprehensive considering some of the reviews but I had great luck and my opinion on the lunch prices are quite fair. $10 for a Chimichanga+Sides+Drink is VERY reasonable compared to Madison area prices. Chimichanga (Avocado+Veggies) - 4.5/5 - I'd say the best part of the meal. I highly recommend the diablo or other hot sauces available to give your meal a bold kick but I prefer spicy food when it comes to Mexican. There was some hard pieces in the chimichanga (one of the vegetables used - not sure which) that seemed out of place. This is comparable to El Pastor's(Park Street) Avocado Chimichanga which is a great option for Stoughton. Rice 2/5 - Probably one of the lesser favorites of the meal. The flavor seemed like a boxed spanish rice which is not really great. I prefer the one at El Rio Grande. Beans 3/5 - A decent side but again, not the best I've had. Somewhere in the middle. Service 5/5 - Friendly and quick service. Although I didn't get chips with the meal(I know there was complaints about that), the food came so fast I doubt I would have gotten any chips in. To be fair, I was the only one there not doing the buffet but I've been to enough places to know that isn't always a guarantee for speed. Prices 5/5 - Again, to me, these seem very fair for Madison area prices. Hopefully the place grows as Stoughton always needs more restaurant variety and because it is more of an authentic mexican style(el pastor/taqueria guadalajara/los gemelos/etc.) - it is a great alternative to El Rio Grande's more mainstream style(Senor Peppers, Lalo's Mexican Restaurant). Both existing in Stoughton is a great thing as both styles and flavors are great for certain crowds and days of the week.

I'm updating this review because I've given Paco's another chance and despite the prices, the food is really good. The three taco dinner is great! The cilantro and avocado is tasty with chicken, beef and goat. I was a little hesitant when I ordered the goat, but it was really good. I asked my family why they now prefer Paco's to other Mexican restaurants in town and they immediately said the food seems less greasy. I'm not sure I agree. I'd say it's more a matter of overall flavor. Plus, the Main Street location is great for people watching. We gave Paco's another chance and we're glad we did.

Really good food and authentic! You can get a soup as a side instead of rice and beans. Soups and sauces make this place unique and tasty.

Paco is a very authentic ,and the real deal ! It is not Mex-Tex or south western food. Prices are great and very clean . I love there food.

Came on a Sunday afternoon to a nearly empty restaurant and got seated immediately. Ordered horchata and enchiladas verdes and ny girlfriend ordered the enmoladas. The horchata was nice, though it wasn't fresh or homemade. I was mixed on the enchiladas verdes, since the rice, beans, and chicken tasted great. My only gripe was that the salsa verde was lacking in flavor and acidity I expect from a salsa. I got to taste the enmoladas and the sauce for that seems to be their signature. Delicious and complex. My girlfriend was very happy with her meal. I was also pleased to see that you can pre-order a dozen tamales a day ahead any time (not just seasonally) I will come back again, especially to pick up more tamales rojas and to try some other dishes

It's also rare to see these "antojitos" in the menu. I also tried the milanesa and that was my favorite. Thin and lightly breaded. So good! The fajitas and taco salad were delicious, as well. The service was good and the atmosphere very colorful. I'm looking forward to trying it again.
