I left this butcher shop feeling pretty disappointed…read more Before I checked out, I watched two customers ahead of me (both Caucasian women) being offered pastries by the person at the register. The first was offered free pastries "on the house," and the second was offered a free baguette. I purchased my steak and wasn't offered anything haha. I can't say for sure if race had anything to do with it but as an Asian customer witnessing two customers who were given complimentary items while I didn't, and not sure if unconscious bias was taking place here. Maybe they were loyal frequent customers, I don't know. Maybe it was l innocent, but unfortunately, the experience left me feeling singled out and unwelcome. It's not really about getting a free pastry or baguette but about this unwelcoming behavior. I should probably mention that it was 2 different employees offering complimentary items to the 2 customers.

Fantastic experience. If you are going spend $32.99 on a single ribeye steak, you want to know you…read moreare getting something excellent. Something you cannot get for $14.99 at the local market. This was the best steak I have ever made at home, and rivals steaks that I have had at pretty good restaurants. All the meat is frozen and separated by farm of origin. All the steaks are wagyu from Austrialian cattle, some grass fed, some barley and grain fed. The cashier was a young guy, but he could tell me all which cattle were fed what, what produced a fattier steak than another one. He recommended I think the Atelier steak, grass fed, $32.99 for a ribeye, because it was tasty but not as fatty as the grain fed ones, which was what I was looking for. His recommendation was to thaw for one day in fridge, pat dry, then season with salt and pepper in fridge for another day. I did that, patted it dry, and salted one more time, then did a reverse sear on the steak. I baked it at low temperature (250 degrees F) until the steak reached an internal temp of 120 degrees F. Then seared 1 min on each side in a hot cast iron pan and little less than 1 min on the edges. Let rest for 10 mins then sliced. Damn, I could tell just by slicing it how soft and tender it was. And when I took that first bite, wow. The best steak I have ever made at home. Served with homemade sourdough bread and a salad with olive oil and balsamic vinegar dressing. An excellent meal. One that you savor. And one that you can share. My wife and I actually shared one steak and it was so tasty, so satisfying, that we were full on 2/3 of the steak. Summary: if you want an excellent steak, one that tastes amazing with just salt and pepper and good technique, go to Herd and Grace. It is pricey, and not something I can get every week, but I will be coming back.

Everything is always top quality and the customer service is by far some of the best I have had at a butcher. Their recommendation are always on point and they even will provide you ice packs on request for your freezer bag if you are going to be doing some shopping or have a decent drive back home. I love that they are well knowledgeable about all the products and take the time if you ask to explain the differences in the meats and how they should be cooked for the best experience. If you are ever by the grove or farmers market ask for Brandon (likes to go by B) or Byron they are always willing to help and make sure you are more than satisfied with your purchase. The great thing about them is that they are father (Byron) and son (Brandon) which means they are passing down the skill set and knowledge regarding butchery and meats. If you are in the area or have the means to travel I definitely recommend supporting this establishment at least for your ultra premium, exotic, or seasonal meats.

It's hard find a good butcher. Some are cuisine specific (kosher? halal?), small neighborhood shop or a big butcher like Huntington Meats. Superb quality of items (beef, poultry, oxtails, lamb, pork, etc.) Knowledgeable and friendly staff. It seems like the shop had always been around. Like meatloaf? Hate making meatloaf? Buy a pound or three of raw house-made meatloaf ready to take home and bake! Thinking about grilling some great burgers. They offer Nancy Silverton's special mix of beefs for perfectly juicy burgers (available in 1/4 pound and 1/3 pound raw patties.)

One time, my friend had a bbq on his rooftop and started cooking up some New York strips and…read moreribeyes. When I ate them, I was like what is this??? This is SOOOO good. Then I had to pry and figure out where he bought them. The first time I looked for the stand, I couldn't find it and gave up. The second time, I figured it out and it's to the right of the second fruit and veggie stand when you walk in (which has really good produce actually). I've bought maybe half of their stuff here. My favorites are as follows: The prime bone in ribeye is the best thing they have here. It's better than A LOT of restaurants. The cow is from California and it's all that special stuff that you want in a quality piece of meat. Next is the veal chop. Then it's the Niman ranch pork chop. After that it's the breakfast sausages, then it's the bacon. The taste on these items are absolutely insane. I think it's one of the things that got me back into cooking, because you can buy a quality restaurant tier pork chop for $12.99 a pound, and you don't have to go drop over $50 (maybe even $60 or $70 now from inflation) for the same type of pork chop at a restaurant. For the non Japanese Wagyu cuts, I personally don't like the flavor as much. But that's a personal preference. Some people love non Japanese Wagyu over prime but I don't. Anyway here's some pictures of the meat. Oh yeah the service is really good and the ambiance is nice because you're at the farmer's market! You can also ask a bunch of questions and they're all pretty much meat experts here.
