No answer at all not even to tell people, " oh hey by the way I closed early today

Drove 2 hours for the place just to be closed I guess the owner just felt like closing early today. He should put that in the business hours that he is allowed to close at whatever time he pleases. I call ahead nothing, for place on Melrose this is highly disappointing and messy too. Two hours going there and now two hours back

I got an incredible steak and the guy that helped me out was super helpful! Couldn't be happier.

Best authentic butcher in LA. They know their meat. They have the best quality. They're friendly. And they even give you tips if you ask ok how to cook / grill / smoke the meat. And the cuts are pro - I got a 4lb brisket that was perfectly trimmed and ready to smoke.

First thing i noticed about this place after passing it a million times was the parking lot to the left of it. Nobody likes having to pay for street parking Came here on Memorial Day and there was no line. Kelly was great recommending meats and going above and beyond to season everything and telling me the best ways to cook it. They sell seasonings of all kind and snacks to go with your meat. For someone who hasn't cooked in years and new to the air fryer all of this was extremely helpful. Was also told they have burgers on Sundays so i will be coming back at the end of the week for round 2

The butcher was really helpful walking me through their meats. They have very good quality beef and lamb, locally raised grass fed and grass finished. They even have ground beef with organs (heart and liver).

Burger day!

Ask the Community - Standing's Butchery

Do they sell whole pigs for a pig roast?

Hi Jen, we don't typically carry a whole pig for roast. But if you give us a call we can always see what's possible.

Do you have Bison meat cuts?

Hi, thanks for the question. We do not carry Bison meat.

Do you sell beef liver?

We regularly keep it stocked in our freezer section.

Do you sell goat meat?

I don't know but they sell lamb.

Do you guys sell beef bones cut for roasting the marrow?

They do.

Do you sell beef liver?

Yes they do! Also a "primal" grind that includes beef liver and heart

Do they sell Lamb shoulder, on-the-bone?

Yes. They do whole animal butchery and only get a certain number of animals, so call in advance to request it.

Are the weekend burgers back?

I don't think there back now. I would follow them on IG.

Do you sell elk?

Joe Rogan

Are they still doing burgers on the weekends?

Not with the covid stuff though they mentioned they're planning to bring it back in the future.

Are their products pasture raised?

Yes they are. Animals first is the way they source. Species appropriate food is very important. I think you can really tell the difference in quality and flavor. Yum. I might just walk over now to get some meatballs for a sandwich...

Do they have Duck? Not whole duck but legs or thighs?

Yes but they do not carry it all year around if you call them they will tell you when they're able and put you on a call list

Do they sell top sirloin cap (picanha)?

Yes! We get whole beef so call ahead. Some smaller cuts like that are limited.

Do you carry chili grind?

Hi! Yeah we can do that for you.

Do they have wagyu meat?

No Wagyu, just grass fed Angus.

Do they have merlot steak cuts?

yes, not always, but I see it often

I need thinly sliced rib eye can i get it here?

Yup!! They are the best butchers in SoCal! They can do whatever cut you desire. I go there a ton.

This was the best steak I have ever made at home, and rivals steaks that I have had at pretty good restaurants. All the meat is frozen and separated by farm of origin. All the steaks are wagyu from Austrialian cattle, some grass fed, some barley and grain fed. The cashier was a young guy, but he could tell me all which cattle were fed what, what produced a fattier steak than another one. He recommended I think the Atelier steak, grass fed, $32.99 for a ribeye, because it was tasty but not as fatty as the grain fed ones, which was what I was looking for. His recommendation was to thaw for one day in fridge, pat dry, then season with salt and pepper in fridge for another day. I did that, patted it dry, and salted one more time, then did a reverse sear on the steak. I baked it at low temperature (250 degrees F) until the steak reached an internal temp of 120 degrees F. Then seared 1 min on each side in a hot cast iron pan and little less than 1 min on the edges. Let rest for 10 mins then sliced. Damn, I could tell just by slicing it how soft and tender it was. And when I took that first bite, wow. The best steak I have ever made at home. Served with homemade sourdough bread and a salad with olive oil and balsamic vinegar dressing. An excellent meal. One that you savor. And one that you can share. My wife and I actually shared one steak and it was so tasty, so satisfying, that we were full on 2/3 of the steak. Summary: if you want an excellent steak, one that tastes amazing with just salt and pepper and good technique, go to Herd and Grace. It is pricey, and not something I can get every week, but I will be coming back.

Everything is always top quality and the customer service is by far some of the best I have had at a butcher. Their recommendation are always on point and they even will provide you ice packs on request for your freezer bag if you are going to be doing some shopping or have a decent drive back home. I love that they are well knowledgeable about all the products and take the time if you ask to explain the differences in the meats and how they should be cooked for the best experience. If you are ever by the grove or farmers market ask for Brandon (likes to go by B) or Byron they are always willing to help and make sure you are more than satisfied with your purchase. The great thing about them is that they are father (Byron) and son (Brandon) which means they are passing down the skill set and knowledge regarding butchery and meats. If you are in the area or have the means to travel I definitely recommend supporting this establishment at least for your ultra premium, exotic, or seasonal meats.

Marconda's is a family owned and operated butcher located in Los Angeles. Established in 1941,…read moreMarconda's is the oldest standing meat market in Los Angeles, it is also the best. It is a must stop whenever you are in town. They have the best steaks you will find and they are not even famous for that, more their great chicken and other meats. Their steaks are so great and you must grill them and don't make them well done. While Puritan Poultry has been around for a while you will find none better than at this place. It just can't be beat. Although not as large as the main meat stall, don't let the size fool you. They will skin, cut, de-bone, or just about anything else on your poultry order. There are 3 generations working behind the counter. They need to business, don't let the huge markets put them out of business. They are the best. The place is so cute and boy is it clean.

Then I had to pry and figure out where he bought them. The first time I looked for the stand, I couldn't find it and gave up. The second time, I figured it out and it's to the right of the second fruit and veggie stand when you walk in (which has really good produce actually). I've bought maybe half of their stuff here. My favorites are as follows: The prime bone in ribeye is the best thing they have here. It's better than A LOT of restaurants. The cow is from California and it's all that special stuff that you want in a quality piece of meat. Next is the veal chop. Then it's the Niman ranch pork chop. After that it's the breakfast sausages, then it's the bacon. The taste on these items are absolutely insane. I think it's one of the things that got me back into cooking, because you can buy a quality restaurant tier pork chop for $12.99 a pound, and you don't have to go drop over $50 (maybe even $60 or $70 now from inflation) for the same type of pork chop at a restaurant. For the non Japanese Wagyu cuts, I personally don't like the flavor as much. But that's a personal preference. Some people love non Japanese Wagyu over prime but I don't. Anyway here's some pictures of the meat. Oh yeah the service is really good and the ambiance is nice because you're at the farmer's market! You can also ask a bunch of questions and they're all pretty much meat experts here.
