Cygneture Chocolate is a must-stop for me when taking friends and family on a day trip through the valley (probably my favourite day trip from Hobart, to be honest). John Zito. Who makes some of the most amazing, weird and wonderful chocolates, both flavours and shapes, that you've ever come across? John Zito. Who's so infused with chocolate that he can even fairly accurately predict which chocolate flavours you'll order from the cabinet? Yeah, I don't know how he does it. Chocolate magic. But seriously, get a half-dozen (or nine... or maybe a full dozen) of mixed chocolates that really do taste like creme brûlée, limoncello, PX sherry (ok there may be a slightly boozy theme here)... basically these chocolates will blow your mind and your tastebuds. Their beans are sourced by Ghana in West African, Papua New Guinea, Solomon Islands, Peru, Ecuador, Madagascar and the Daintree in North Queensland, Australia. The Cacao Bean is grown, fermented, sun dried & shipped to Federation in Tasmania. Federation roasts them before removing their husks to create cacao nibs. These nibs are stone ground to create chocolate liquor. In the process of grinding the nibs it releases fat from the cacao creating the chocolate liquid. This liquor is then aged for various lengths times depending on the flavor. They believe their custom beautiful chocolate is authentic, less processed and more ethical & sustainable. The chocolate soaps, candles & gifts smelled fabulous & were beautiful. We ended the chocolate samples & creamy ice cream.
