I fell in love with Nimita and you will too! Having never heard of Ayurvedic cooking, let alone an Ayurvedic lifestyle, I savored all the lessons she imparted in us during our cooking class. Nimita came to our house, which was an Air BnB and lacked some cooking essentials, but she skillfully improvised when needed and we made a delicious, loving meal nonetheless. She was well prepared, on time, totally loaded down with all the amazing ingredients, empathically luminous, and basically a vault full of all facts. Since taking her class I've stocked my pantry with Ayurvedic spices and am trying to balance my heating and cooling foods on a daily basis, which I believe is actually giving me a new sense of clarity through all the hub-bub/ordinary busy-ness of life. We signed up for a cooking class with Nimita and ended up with so much more! We met at her home and she had all the ingredients set up for us. It was very hands-on and we all got a chance to participate in making all of the dishes. Not only did we learn how to cook and enjoy the delicious meal we made, but she taught us all about Ayurvedic philosophy. This place is small and simple and full of heart. I've taken two Ayurvedic cooking classes with Nimita over the years and she has beautiful energy. Cozy atmosphere, beautiful furniture and artwork, And the very cute man (Brent) managing the counter is also easy on the eye. I had a coconut chai (dairy free). Delicious. She uses fresh spices and tea in her traditional recipe. They have a food truck in back (space doesn't have a kitchen) with a great casual outdoor Patio. Spinach paneer was delish. Haven't tried the Inales yet (Indian tamales) but love this Idea! They also have refrigerated foods to go. And sell Ayurvedic spices, and beautiful Ayurvedic apothecary skin care products made by local Ayurvedic practitioner Corinna Maharani who is amazing. The only thing I don't love is drinking out of paper cups. I love a real glass for chai. Since they don't have a kitchen they use paper. But at least Togo cups are eco friendly. I tried Nimita's for the first time at Draughtsmen last month and I am still dreaming of the savory chutneys that accompanied my samosas. Nimita was generous with her portions and won my heart via my stomach with the deliciously prepared plate. Samosas were hot, chutneys were chilled, and my appetite satisfied. Pricing is fair considering it's hand-crafted food. If people are willing to spend $4.50+/taco with other vendors in town, you shouldn't balk at these prices. That being said, I think more people would get hooked on this vendor if there was a cheaper small bite option on the menu. It's tough to commit to a full plate when you don't know if it'll be good, but based on my experience, it's worth it to just dive right in. read more

We catered a lunch for 25 people with Nimita. Nimita is extremely easy to work with. Quick to respond and very accommodating. She worked with us to develop a menu that was within our budget. She delivered the food on time, and it was great! The variety of food she prepared was amazing, along with the various sauces and chutneys. She even through in some papadums at no extra charge! Came upon Nimita's Cuisine at this year's Earth Day Festival and was thrilled at the chance to eat homemade vegan/ vegetarian Indian Food. After checking over the menu a friend and I decided to split something dubbed as a 'Regal Platter' with a side of naan. Excited for the promising dish that was pictured on menu my friend and I stepped aside and waited for our food to be cooked. We received our naan relatively quickly. This quickness however was not to continue with the rest of our order. We stood to the side for about 10 mins waiting and within that time frame we watched one single customer order after us and receive their food, one customer who ordered before us receive their food, the cooks along with Namitia herself joke and eat as they prepared nothing, all before they realized something was amiss. I suppose the fact that we had been standing there idly watching alerted Namita to call out and ask if we were waiting on something. After explaining that we were still waiting on our 'Regal Platter' they scrambled to quickly shove out a plate of food that resembled nothing like the picture they had on the menu. Not wanting to readily dismiss the food we took our plate and sat at a table to try to enjoy our fare. Sadly, there was no enjoyment, spice, flavor or anything edible on our plate. The chickpeas were undercooked, the rice was unbelievably cold, and there were two items noticeably missing. To conclude this experience the only positive note was that we were offered a refund after inquiring about the rest of the platter as well as the discrepancy between what they had shown and what had actually been served, albeit that came with its own set of difficulties. Namitia claimed she would only refund us for half of what we paid, because she claimed we had eaten half of the platter. In actuality the food was so inedible that we could only swallow a mouthful or two before giving up. She did eventually refund the full price of the platter, but only before make an ungracious comment about "taking it up with our karma". Well Namitia maybe you should seek counsel from your karma about better business integrity and actually delivering on your promise of providing delicious nutritious food. Update: Received a personal message from Nimita, "In spite of your great rudeness. Your comments continue to describe the ill will you both possess". I'll just leave that there for anyone thinking of doing any sort of business with this woman. She is highly unprofessional and conducts herself in a deranged manner. read more

What a delight! We came to Draughtsman on a Saturday and Nimita was there and everything smelled delicious, but we had already eaten. So on Sunday we were in the area and we came back to Draughtsman in the hopes she would be there. Thank goodness she was! We ordered the chicken tika masala and the butternut squash curry. It. Was. We have sampled Nimita's cuisine at several events here in Santa Barbara before. When it came time to book a caterer for our housewarming party, with well over 100 guests, Nimita was the only clear choice for us! We contacted her, and she came up to see the place and help us figure out decorative and serving challenges. She was wonderfully interactive and full of great ideas, and of course the food was absolutely delicious and so bountiful ! Her servers worked diligently to cycle the plates for reuse, helping make this a highly sustainable event! That's another thing that really appealed to us. Nimita catered my wedding and she was amazing to work with. She hosted me in her home for a tasting and the food was INCREDIBLE! She also made me feel very welcome with her warmth and friendliness. Before the wedding, I had the opportunity to visit her home island, and she gave me recommendations and offered to put me in touch with her friends and relatives who still live there. She definitely treated me more as a friend than a client. As we got closer to the big day, Nimita was excellent at making me feel like everything would be taken care of and reducing my anxiety levels (no small feat when you are planning a wedding!). And the food was amazing the day of. I opted for an all vegetarian meal, which I was a little nervous about feeding to my husband's family - there are some hunters in the group. But my husband's carnivorous uncle made a point to tell me how much he loved the food (against his expectations!). I did catch him later eating elk salami he smuggled in though, lol. This is a review for Nimitas Food Truck. Atmosphere: This food truck was parked out of one of the breweries. I was happy to see it as I think food is the one element people want to have when drinking: able to order food. You order food and eat standing or in the winery/brewery there are not outside tables or chairs. Service: There wasn't a line but had to wait several minutes for food, which they did bring into the brewery so that was nice. Food: I really wanted to give this a great review and enjoy the food, but it was very poor experience. We ordered omlet de Espanola (egg, potatoes like a fritatta) with a overly spicy mayonnaise. It was okay. Then one small very charred lump of "meat": this is vegetarian food so not sure what it was... 'fake' beef? pork? So overdone no flavor. Food wasn't cheap either considering what we got. Summary: I see alot of positive reviews not sure if they are for private catering events; so maybe it was an off day for their food truck: nonetheless I would not go back again. read more

I was happy to stumble upon this food truck after craving Indian food for the past few days. They had just what I wanted: chicken tikka masala and samosas. It was a bit pricey, so I was hoping the food would be served in really large portions or it would just be so delicious I wouldn't feel bad about spending $18 on samosas and a chicken tikka dinner plate. I ordered mohanthar to be delivered for my dad's birthday a few weeks back and was later informed that the order was too small for delivery and they were also out of the ingredients needed anyway. No problem. A few days later Nimita emailed me letting me know she had some extra time and was able to make the dessert if I was still interested. She went out of her way to make and deliver a very small order ($8 total) and she even included a sweet note with it. The mohanthar was delicious and my dad was very happy. I haven't tried any of her other food but would recommend Nimita just out of her generosity and customer service! read more

We hired Nimita's Cuisine for a 3-day catering job for an event at UCSB. She provided Ayurvedic vegetarian breakfast, lunch and dinner for 125 people each day. Nimita's food was delightful as were her lovely staff that came each day to drop off the food. Nimita worked closely with us throughout the entire process, including an extensive amount of menu planning. She checked in each day to ensure that everything was going as planned. Overall we were extremely happy with our experience hiring Nimita's Cuisine for our event. All of our guests were raving about the food, especially the salads and her famous butternut squash chickpea curry! She now has a mobile food truck that makes her cuisine accessible around town. She also offers it through a delivery service. I just tried this new restaurant and enjoyed the causal and unique ambiance. The food is very fresh and tasty, quality ingredients, and for those that have issues with Indian spicing the dishes are very low level spiced so local tastes can enjoy. If one wants higher level spicing the owner will accommodate. As far as terrible food comments by others I totally disagree. I travel to India 4 to 5 times a year and have eaten at top restaurants from north to south India and found Nimita's food tasty, so ask to have the food fully spiced if you like bolder flavoring. The restaurant just opened and a few more tweaks and menu ideas will make this a go to place, especially if Dosa is on the menu, and then you will see me hanging out a lot at this restaurant. read more

Nimita catered our wedding in Santa Barbara and, four months later, we still get comments from the guests on how good the food was. And it really was that good. We needed a caterer who could do an all-vegetarian menu that was something more interesting than the usual side-dishes you get from a lot of the larger caterers. Nimita came through in spades: she prepared a very thoughtful menu with fresh ingredients. Every dish was made with a great deal of love and attention. She also was very helpful in putting together a mix of vegetarian options that would be more familiar to some of my family members with more conservative pallets (e.g., vegetarian shepherd's pie) along with her delicious, more traditional Indian recipes. Throughout the process, Nimita constantly showed that she cared not just about preparing good food, but also about making the wedding a warm, heartfelt experience for everyone.
