The first thing is that the place was about 2/3 full and they seem pretty well staffed in the front of the house. There were 2-3 bartenders behind the bar at all times. After we ordered (2 cups of lobster bisque and bread), our server apologized and told us there was a large party in their private room and the chef was having a hard time keeping up. I can't imagine they normally only have one person preparing all of the food on a normal Saturday evening! It took no less than 45 minutes from when we ordered to get our food. Some olives or something would have been nice. My mom also had to wait 15 mins for her 2nd glass of wine. I'll tell you, we weren't going to order anything else after that! There was some really nice classical guitar music by a live musician. I tipped him on our way out. After we left, we noticed a $5 entertainment charge! Is this a norm in Colorado? There are some truly great bartenders there who provide attentive, friendly service and make the experience enjoyable. But if I walk in and see her behind the bar, I will not stay. She has completely turned me off from being there when she is working.
