The staff was wonderful, despite our very iffy French. To start, we had some adorable leaf-shaped crackers, along with bites of cold meat pie, escargot, and little cones with (I think) lentils. That was followed by a poultry course (possibly quail, but I'm not sure) with a berry sauce, and then an incredible fish that was somehow injected with a fruit paste. Everything was cooked to perfection, and it was nice and light, which helped since the portions were fairly generous. The chocolate dessert was unreal, and the small bites after (candied orange peel, mini macarons, and a couple of others) were delectable. Ed and Em are clearly chefs at the top of their craft, and it was a pleasure experiencing their work!

Our hotel reached out to the wonderful staff at La Ciboulette and we had a lovely experience. For the two vegetarians the cooks came up with an adaptation of an appetizer including a poached egg, and a very good risotto that they both loved. My daughter and I enjoyed the rabbit after a pork pate appetizer. Everyone was very happy with our two deserts which I managed to capture a photo of - the deconstructed pavlova in particular was excellent, still thinking about all the lovely textures and flavors in that dish. In Beaune there are a multitude of Michelin starred options but if you want a nice contemporary French bistro with an amazing staff, try La Ciboulette.

Mimsy got the onion soup as an appetizer, beef bourginon as her main course, and a little chocolate cake as dessert. I started with escargot, then the beef, dessert was creme brûlée. We split a bottle of Fixin (finally learned how to properly pronounce the name of this medium-bodied Red Burgundy). Our server had a good command of English and was very attentive. The food was good overall. What is really special about this place is the atmosphere, it is astonishingly gorgeous. The dining room is in the former wine cellar of this thousand-year-old monastery.

It wasn't chewy - and in fact, it was flavored by the sauce it was stewed in. The sauces had me salivating. The waiter/owner brought out a mushroom soup- made from local mushrooms, as an extra dish not mentioned on the menu. It was quite delicious. The dishes were creative with a variety of purées and other items. The plates were colorful and delicious. I had the panna cotta and the berry flavor was savory with a wine flavor that was perfect - not too strong or mild. The service was excellent and the owner observed all clients and attended to their needs. It was not very busy, but we felt like the service and good should bring lots of customers.

It was a Monday and most things are closed in Beaune but, much to my surprise this place was still fantastic given our limited options. One of the best things about France is the sheer number of prefix meals during lunch and dinner. There's always an incredible array of dishes to choose from and the prices are just right! This time around I opted for the following: - Terrine - My first one of the trip and lived up to the hype. A hodgepodge of every meat, liver that makes it so great. - Beef Burgundy - Braised for 24 hours, rich and concentrated flavors. - Trio of Fromage - Easily the greatest trio of cheeses I've ever had, no joke. If I spoke french I would have asked our server because they were that legendary. Anyone wanna look at my photo and help a brotha out?! We ordered a bottle of the 2009 "Clos Des Marconnets" Premier Cru that was fantastic. Very lean, acid driven and a perfect accompaniment to the richness of the food. All in all, it's a great lunch spot and worth the stop. It should be noted that this place is know for their seafood but, when in Burgundy... :)
