Milk Trade is another genius concept from the team behind Scouts Honor, Garde Manger, and Le Petit Souffle. It is another part of the hole in the wall that replaced the eclair place with a more Filipino-friendly food.
It's concept is influenced from the streets Hong Kong that sells steamed milk and the egg waffle. So, we tried different styles of steamed milk from hot, chilled, egg yolk, or egg white, and even chocolate flavor.
For me, I loved the warm egg yolk it has a silkier feel compared to the chilled ones. Both are good, I just preferred the warm one. It has that light, airy custard flan feel. The egg yolk has a richer feel to it.
We also tried the egg white chocolate (chilled). It reminded of chocolate milk when I was a child, but here its a flan form. Some chocolate has set at the bottom of the bowl, yet it has the rich chocolatey goodness but light and smooth.
The eggette is the egg waffle that is common on the streets of Hong Kong. Their version is a bit sweeter but more crustier, which for me is just perfect.
The team of Chef Mikko never failed to amaze me with their simple concepts and delectable food. They've transformed the lowly steamed egg custard and waffle to an upscale snack that will become everyone's favorite soon.
