The store carries lamb, beef, chicken, and pork products, raised at the UW-Madison's own farms. It also carries cheese products but unsure if they are all made by the UW-Madison. The store is clean and well organized but seems to be a bit low on some stocks due to its popularity. The prices is average. This is a unique concept because the shop is student-run with education and innovation focus instead of just "selling meat." This store provides an additional option to support the UW-Madison and a way to obtain good quality meat. In the lobby next to the store, it has a timeline and exhibitions showcasing meat cutting history and technology. While the staff there wasn't able to fully answer my inquiries but still provides helpful info as a first-time visitor. What's unusual is that it also sells Asian products like dumplings, which doesn't seem to be something one would expect from a specialty meat shop. Unsure if it's one-time only, seasonal, or long term. An interesting shop, worth a visit at least once.

I think this is mostly because ya'all think there is a correlation between the dollar amount and meat quality. Jacobson brothers did not come to the rescue when I needed a 8 pound fresh ham to brine. Knoche's did. Knoche's seems to carry every part of the cow and pig. Some parts are not on display in the case, and are hidden away in the basement freezer. I found this out on my most recent meat hunt -- for short ribs. Ask the the cute aproned men to run down and get them. While not the cheapest priced cuts in town, they are reasonably priced and fairly high quality. Furthermore, you can feel good shopping at a locally owned joint. They also have family recipes of chili, potato salad, bratwursts, etc that I am always tempted to try.

What really shines here? Their food stall. I had the spam musubi and immediately went back inside to get 2 more lol. The person working the window even gifted me shrimp toast, which was very sweet. (The shrimp toast is fire). This is more of a pick up and go kind of spot, although they have stools and a counter if want to eat there. Think cafeteria vibes but not in a derogatory way. They sell out often. I know bc I came here yesterday around 2pm, SO excited for spam musubi, only to learn that they sold out of everything at 1pm LOL. Today? I made sure to get there around 1130am. Was able to get garlic butter shrimp (7 BIG shrimp, so flavorful) served with pasta salad (delicious, I usually do not love pasta salad), and rice. I also got a shrimp lumpia (delicious) and a spam musubi for later. Food was phenomenal as usual. The food scene in Madison is not as robust as other places I've lived, but this place? A gem. They also make sandwiches from their deli meats which I have not tried. Their meat counter is well stocked with excellent cuts of steak, pork and chicken that you cannot get at most grocery stores and the prices reflect that quality. They also have some groceries and items you might find at many convenience stores. It is great to have this resource just down the road from us.
