I had a random grilled cheese craving so when we saw Matt's Snack Shack parked outside of Denver Beer Co on New Years Eve we decided to share a late night snack. There was some conflict over what we should order because my husband wanted The Buff, which had chicken, ranch, pickles, and some other things that sounded like they would be disgusting in a grilled cheese, while I preferred a more classic option. He won because to be fair he would be eating the majority of it, and I was really glad he did! The combo was amazing! Oh, man, the wings... Every time I order Buffalo wings (which is more often than I care to admit), they always come out deep fried, crispy, greasy, and then as I'm licking my fingers, I totally regret eating them. Not at Matt's. His are grilled, deliciously charred, juicy, and somehow, I'd even call them "fresh," which is never a descriptor that enters my mind when I eat other wings. The medium-spicy, mouthwatering red-orange sauce evokes memories of Buffalo sauce, but it's so delicious and from-scratch tasting that it seems like it's on an entirely different level. I tried Matt's Snack Shack's food truck at Ratio Beerworks this past weekend. The wings are VERY GOOD! They are nicely charred. We got the dry rub and they are super tasty. We also got the south of the border brat. This was good, but I think I'd like to try the grilled cheese next time. Service was very good. The gentlemen taking orders and cooking were very pleasant and thorough. I had an issue with my order which was my fault. At the last minute, I decided to order 12 wings instead of 6 (I hadn't yet paid, but I did originally want 6 wings). I paid for 12, but ended up getting 6 when I came back for my order. This was completely my fault because I did change my order last minute. However, we addressed the issue and it was resolved and I received the other 6 wings, which were served to me inside the brewery. This was above and beyond as I know I was a bit of a pest for the last minute change and it was very busy for the cook/order taker to leave the truck to find me in the very busy brewery to serve me the second half of my order. Matt serves up snacks that are perfect for beer drinkers. The wings, with his homemade Buffalo-style sauce, are vinegary with just enough heat. Grilled wings? It worked for my table! We each got a different grilled cheese. My buffalo chicken grilled cheese was gooey, and delicious. The New Mexico, with its hatch chiles, was pretty good too. The truck is simple: no sleek skin on the truck with a fancy marketing campaign. Just a white board menu and a guy inside making delicious food. I'm really enjoying how food trucks partner with Denver breweries. Matt's Snack Shack is another example of this. In their case, they offered two menu items that feature the host brewery's beer- the Cowboy Grilled Cheese and the Beer Brat. Well, I was hungry after my workout and I'm a cheap date where beer is concerned, so I started by ordering the Cowboy Grilled Cheese. It had a lot going on with the pulled pork, bacon and cheeses. Sliced into triangles, it was an ooey gooey cheesy meaty hot mess. And delicious. That day, their fryer wasn't working so they were giving away free chips. It was appreciated compensation. Next up for my hungry friend was the beer brat with onions and jalapenos. Both onions and jalapenos were sliced thick. Those jalapenos fully kicked my ass to the point that hiccups ensued. The menu is boring, mostly grilled cheeses with odd disappointing toppings. The chicken wings only offer one sauce and it seems that they went with a bland, 'no one will hate it' flavor that leaves me wanting more. Also, everything seems to take forever to be made despite the boring menu and limited options. I might be more critical here because they always seem to be at the tap room I go to. I grabbed some food from Matt's Snack Shack when it was in front of Fermentra Brewing. They have an assortment of interesting grilled cheeses with various ingredients mixed in. We grabbed the bbq and the green chili sandwiches as well as some wings. My favorites was the chili. It added a great kick to the sandwich. The bbq was good as well, but a lot sweeter than the chili. Their wings were good as well, they were about average price wise at a dollar a wing, but the buffalo sauce was one of the better that I've had. read more

Well, last night I really put the nail in the coffin of any hope I ever had of being a vegetarian. I wanted to try Matt's Snack Shack specifically for the grilled cheese, but after eating his wings and brats, I didn't even make it to that other tasty snack. On Tuesdays at Renegade, he offers a wing special - 8 for $5 or 16 for $10 (regularly 6 and 12 wings instead for those same prices). We ordered 16 plus a beer brat ($5). Now there are some places around town where I enjoy wings, but when I say "enjoy" I mean I eat one wing. They're good, but they're not THAT good to me. To be honest, I find usually find wing eating a little gnarly, even a damn good wing. But these grilled wings were amazing. I ate 5 and stopped only because my husband was plowing through them as well. Next time I will order my own 8. That's just unheard of. I like the little drumsticks the best and these had super juicy, tender meat with slightly crisped skin and a few nicely crunchy almost charred (not burnt) bits on the ends. They were really spicy with a little bit of vinegar tang. Not just hot sauce like some wings where that is all you taste. These had more of a complex flavor and they were addictive. I didn't even dip them in anything because they tasted SO good, though my husband went through two little cups of ranch. We also shared the brat which was on a yummy chewy bun topped with kraut and mustard (they also have other sauces, onions, jalapenos and other toppers if you so desire). It was delicious but we were both focused on those wings. Hopefully on my next visit, I'll save some room for the grilled cheese because he had a bunch of varieties - plain (American and cheddar), plain with ham and mustard, bacon, pepperjack - and they all looked up my cheese-loving alley. He is a very friendly, funny dude to boot! I had been perfectly content leaving wing night to my husband and his guy friends, but I will be rethinking that in the future. P.S. We tried Matt's Snack Shack tonight for the first time at Renegade Brewing Company and are instant fans! We ordered 6 grilled wings with the house made buffalo sauce, the Cowboy Grilled Cheese, and the Bratwurst German Style. The wings and the sauce were wonderful! Wings were a substantial size and the sauce had a nice spicy kick to it! We devoured the Cowboy Grilled Cheese within minutes! We love barbecue and grilled cheese so this was a perfect combo for my boyfriend and I. Our least "favorite" was the brat, but that's because we make them the same way at home, so it wasn't as mind blowing as the other options we ordered! However, it was still delicious! These really are the best wings in Denver. I've had wings from lots and lots of Denver digs and Matt seriously knows what he's doing. They arent just fried and thrown in sauce, they are grilled up and made with love. I dont know what hes putting in that Sauce either but theres got to be some black magic involved. I've had a beer a few times with Matt himself and he's a straight shooter down to the bone.
