    Attended an Italian cooking class via Groupon last Saturday at Cuisine Gourmet in the Gables. We…read moreexpected this to be an interactive cooking class, meaning we ourselves would be dicing and sauteing away but that was not the case. Instead, the cooking station is surrounded by a tall counter and bar stools and the group simply watches Claudio cook. Our group had about 12 people, all very friendly 20 and 30 somethings. Claudio started off explaining about different cooking and language classes the institute offers. We then indulged in some prosecco and antipasti (prosciutto di parma, olives stuffed with anchovies and chunks of parmigiana cheese). The first course was gnocchi with Gorgonzola cream sauce, accompanied by an Italian red zinfandel. It was simply boiled gnocchi out of a box and Gorgonzola slowly melted in heavy cream. Several people in our group were kitchen novices but if you are an intermediate cook you are well beyond this step. It could have been spruced up with some crisped pancetta or toasted pine nuts. The second course was rigatoni with a simple bolognese sauce. This dish was delicious and made me rethink my tomato base for my own marinara sauce. Claudio used Pomi tomato puree right out of a carton and it had just the right texture and sugar already added to balance out the acidity of the tomatoes. I will look for this stuff at Publix. For dessert, Claudio served a Marsala dessert wine and a chocolate hazelnut treat he brought from Italy, as well as some store bought panettone. The chocolate treat was somewhere between a block of chocolate and a really dense brownie. All in all, we had a fun afternoon and met some nice people. If you're expecting to improve your culinary skills, you will be disappointed.
