I had high expectations for this food truck. I got The Bacon Made Me Do It! It's their spiral mac and cheese with bacon crumbles, tomato, and green onion. It was moderately warm with burned bacon and too many onion and scallions. It was a very dry mac and cheese. It defensively could have used more cheese on he noodles! Got the regular fries. They are cooked fresh and comparable to Rally's fries. They have way more flavor than the mac and cheese. I was really disappointed with this experience. I've had a few samples of this delicious mac & cheese at various Yelp events and have been in love ever since. Even though it'd been months since I last tasted their mac, my memory never faded. I finally caught Mac Shack at Eastern Market and was so excited, I almost tackled everyone in my way to order. Luckily, they offer half portions for almost half the price... I was completely satisfied with the small for $3.75. Plus, paying $7 for some mac and cheese seems a little ridic when I'm gonna eat it while sitting on a curb. Deliciously creamy, delightfully tangy and amazingly rich mac and cheese. If you see the yellow Mac Shack, do yourself a favor and give them a try. P.s. At a recent event with a line up of food trucks, Mac Shack stuck out at me because they had the longest line. Between their apparent popularity and the enticing discription of buffalo mac -n- cheese, I waited my turn. What I got was a heavy and heavenly portion of their buffalo mac-n-cheese. Mac n' cheese have never been one of my favorites, but I had to try Mac Shack when I saw the menu. Not your nomal mac for sure. I had the Papa Smurf (wild mushrooms, nutty parmesan cheese, caramelized onions). It was delightfully tasty. The mushrooms and onions kept the macaroni from being bland. The only downer was that I would have liked the cheese sauce to be a bit creamier. It was not that smooth, creamy consistency that I would expect for macaroni. We also had the garlic paremesan fries which were my favorite. They were crisp and coated well with flavor. The mac n' cheese is a meal in itself and I would try it again with a different mixture. Ordered a mini "Cluck like a buffalo" and it was absolutely amazing! Chicken was tender & juicy, onions and bleu cheese were not overpowering and of course the mac itself was awesome! It was the perfect amount of cheesy. The mini was perfectly filling and still left a little room for samples as I strolled through the market. I could eat mac and cheese every day for the rest of my life and I wouldn't mind ordering it from the Mac Shack every time! We tried the Mac Shack for the first time at the recent rally, truth be told I was a little disappointed. I remember them doing a bit on FOX 2 a few months ago where they made the "Bacon Made Me Do It" on air. So I've been patiently waiting to get the chance to try their food. I love whatever type of pasta they were using - they looked like little berets with tassels on top. The bacon, green onion and tomato topping adds a lot to the dish but the cheese sauce was mostly bechamel and really grainy. Maybe the sauce broke since we got to the rally later in the evening but I was expecting smooth super stringy cheesiness. On the plus side, for $6.50 we did get a heap of mac n' cheese but I would've opted for less food and more cheesiness. My opinion aside, they do have a number of great flavor profiles to choose from like the Cheech with chorizo, and the I-80 with gravy on it and no matter what you order you'll be pretty close to full by the time you finish it all. read more

Papa Smurf (caramelized mushrooms, onions, Parmesan cheese): I tried this during the past weekend at the Mo Pop music festival. This was good. The noodles were cooked well and the cheese sauce was rich and creamy, making a good base. The sauce felt slightly grainy(?) to me though, like it wasn't completely smooth. The caramelized onions were my favorite, as they added a hint of sweetness. The mushrooms were also nice, although not too flavorful. There was Sriracha, which I added for a spicy kick. Overall, I enjoyed my mac & cheese, and I would consider getting this again if I was in the area. However, the price was rather high... The people who work the truck couldn't be any nicer, and they are clearly doing something right by exploiting this comfort food niche. I give them 3 stars for their Mac & Cheese (the Papa Smurf is my favorite), which is good but nothing mindblowing. But I give an excitable 5 stars to their assorted French fries, the unsung heroes of the shack. In particular I am crazy for their take on poutine, in which they eschew cheese curds for a cheese sauce and coat the whole slathery mess with an expertly-fried egg. I've had the Mac Shack quiet a few times now. The first was at St. Andrews Hall during the Yelp Back to School event in 2013. After that it was Eastern Market a few times, then CRAFT event, and last week at my employers place for Employee Appreciation lunch. Mac Shack never disappointing. Amaze balls were yummy (deep fried mac balls). There's this crunch to the outside, and gooey velvety inside. Not much more to say about the others other than they are delish. Ever since I was little, I've LOVED mac & cheese. And Mac Shack does it great. I first sampled them at the Yelp After School Special event, where I got a small cup full of their plan mac, & added some crumbled bacon on top. Mmmmm...so smooth, creamy, and delicious. And the bacon was true chunks of thick, crumbled bacon - no baco-bits here! I was in love. I made it a point to catch them about a week later, when they were parked in Midtown at Great Lakes Coffee, accompanying their "Tacos and Tequila" night with some spicy, mexican inspired mac. I don't recall the name of what I ordered, but it had shredded chicken, jalapeno, tomato and onion. It packed a kick of spice and was DELICIOUS! It's pricey for what you get, portion wise. And as a mobile truck, you obviously can't find them in the same spot all the time. But, I look forward to the next time I have a few extra bucks for lunch and happen upon this glorious rolling haven of cheesy noodle goodness - I'll be a happy girl! read more

I had a sample from the Mac Shack at a Yelp event so I was excited to order from the actual truck during the DYI few in Ferndale. A friend and I split the Bacon Made Me Do It. I love the cavatappi (corkscrew) pasta that they use. It helps keep the other bits of bacon, cheese, tomato and green onion goodness on the noodles. The noodles were cooked well with a good amount of gooey cheese. My friend added some of the siriacha sauce to hers that was available on the counter. We were not the only ones and the mac truck had quite a line. But well worth the wait! read more

Extreme measures are called for when the day's already gone pear-shaped by noon. Answering a coworker's distress, I searched for the surefire remedy in my arsenal: mac 'n cheese. Just one problem, who serves up a tureen of cheesy goodness worthy of Dino's downtown? A few keystrokes presented me the answer: the aptly named Mac Shack. Mac Shack set up on Cadillac Square so we walked over, hoping to pre-emptively burn off a few calories before ingesting our daily recommended intake. One plump heap of noodles, cheese, and assorted toppings set us back $7.50, a small price to pay for continued sanity until 5 PM. Don't be deceived by portion size. The hamburger-sized dollop stretched from lunch to dinner. The choice of rich temptations runs from plain cheese to artery-clogging Bacon Made Me Do It. I favoured Kho San Road, an avenue to spicy, lip-tingling peaks of bliss. Sriracha sauce mixed up with cilantro, two tiny fresh lime wedges, sprouts, and more hits just the right notes. This is southeast Asian cuisine pulling no punches, served with fat coils of chewy, moist noodles. I nearly embarked on a Dune Crawler with its roasted artichokes, tomatoes, and capers, but sriracha sealed the deal. My stressed out compatriot in crime forked into a Dune Crawler herself, and we both sadly left behind the breeze and music-strafed plaza for our desks. Kho San Road is phenomenal but not for the mild-spicy sort of person. The lime juice is essential but just right. I really could've eaten just half, but my baby was hungry. My coworker drowned her sorrows underneath plump macaroni, losing herself in cheesy paradise for at least a half hour. Mac Shack, you're doing it right. I'm an addict. read more

Mac Shack, you broke my heart. You were like the popular guy in school that everyone had a crush on. Your curly macaroni tendrils were adorable, the way they fell across your website. Your PAPA SMURF sounded like everything I ever wanted and needed: a little bit wild (mushrooms), a little bit nutty (Parmesan). Then you threw in the caramelized onions, and I fell in lust. I stalked you from afar, and finally had the opportunity to come over and get acquainted. You welcomed me, and I braced myself for some creaminess, some personality...but was hit instead with bland bechamel and limp flavorless onions. What happened?! The shaved Parmesan was a great intro, but it sat on top of a pile of slightly too hard mac that was begging for some real cheese. The sauce had a strange, lumpy texture that seemed all roux, with hardly any flavor. What was most disheartening of all, though, were the "caramelized" onions: slightly sauteed strands that still had bite to them! Yes, I understand that most places that claim they caramelize their onions probably don't actually go through the true 45-min process to do it, and I'm okay with that...but these onions weren't even browned! Too bad, so sad. Redemption: the mushrooms were alright, the guys from the truck were nice, and they had Sriracha readily available. The Koh San Road was slightly better... I'm not sure if I'm missing something here, but given the $8 price tag, I don't know if I'll be back to find out. P.S. To be fair, even though the cups seem small, they are pretty dense and filling. Ordered the "Cluck like a buffalo" Mac. It rang it at $8. Definitely filling enough for lunch. The menu indicates it comes with 4 toppings- spicy chicken, green onions, blue cheese and buffalo sauce. The base Mac is awesome, it was a little cold but it's winter in Michigan so that's understandable. The chicken is not breaded (which I prefer) and really nicely seasoned, but there wasn't a whole lot on it. The buffalo sauce was, well... Buffalo sauce (tasted like red hot). I don't think they put any blue cheese on mine which was a bummer because I'm a fan. If it was mixed into the sauce I didn't really taste it. If they were out then it would have been nice if they offered to sub a different topping like fresh tomatoes instead. Last night, I was having the crappiest time trying to get ready to go out. I'm going to blame it on Mac Shack. They were the reason why my skinny jeans weren't fitting right. Sad, but the mac was oh-so worth it! I love mac and cheese, and often its hard finding good mac and cheese when eating out. I tend to be picky with it, and if the cheese is too runny, then forget it. Too thick and chunky? Eww, no thanks. I guess I'm the Goldilocks of mac and cheese, because it has to be just right. Mac Shack's mac and cheese is pretty darn close to that just right status. With a menu that covers all bases, your mac and cheese can be served barebones, fancy or just straight up fat girl style. I decided on the special for the day that featured a brisket chili on top of the mac. The chili was perfect, the mac was at the just-right consistency. The flavors weren't super complex but this was the perfect comfort food for that specific cold February morning. Meanwhile, my sister decided to carbo-load with her mac and cheese and fries breakfast special. That's right, mac and cheese on top of fries with an egg on top! It looked super delish, especially when the over-medium egg was cut into. Yep, this mac and cheese lover has a new mac and cheese crush. I have to return....just based on the menu, I know I have much more eating to do. I just have to remember to skip the skinny jeans the next day. read more

So basically I have to say is hells to the yeah for The Mac Shack. They were in downtown Rochester for the Deck Art festival and I had the opportunity to enjoy some incredible mac n cheese. I don't know what type of sorcery they use to make a vegan cheese sauce but it was good. I wouldn't have gotten it that way but the wife is lactose intolerant so I have to make my sacrifices. Quite the cross I carry.... We got the chorizo, onion, jalapeno and cilantro mac. I may or may not have had to change my boxers after eating this. Can you really change mac-n-cheese to really offer different and unique dishes? By looking at their menu, it sounds like they can pull it off even though the base of the ingredient is just mac-n-cheese. Well, they execute it and execute it well. So far, I've tried their Dune Climber that includes artichokes, Garlic Parmesan Fries, Poutine Fries, I-80, Bacon Made Me Do It, and Kon San Road So much to talk about each one, so I separated it into two categories: I'll Take Seconds and No Thanks, I'll Pass I'll Take Seconds - Parmesean Garlic Fries: I would definitely order another round. They are nicely fried and crispy, but its the garlic that sets it apart. The minced garlic was plentiful and you could taste it throughout the whole order. Dune climber: the two elements that elevates the flavor are the artichokes and capers. The contrast of the acidity from the artichokes and the saltiness from the capers are an excellent balance. Kohn San Road: It has peanuts, bean sprouts, green onions, lime, cilantro, and sriracha. It's an excellent blend of texture, acid, and heat. I can order this one two, three, or as many times as I'm there. It's also lighter than the other dishes, giving it an advantage. No Thanks, I'll Pass - Poutine Fries: although they are good, I wouldn't be ordering another. The gravy and the egg blend together well, giving it a smooth rich sauce. However, it's just too heavy. Even with sharing the fries, we didn't finish them. Bacon Made Me Do It: having apple smoked bacon, fresh tomatoes, and green onions. Bacon on anything is good and although this was good, I don't thing it's as complex as they hoped. The bacon gives texture and saltiness, but the flavor is still a basic one note. It didn't seem as good as the Kohn San Road. I-80 has beef brisket gravy, wild mushrooms, caramelized onions, fried egg. This is just a little over the top. The egg, mushrooms, and onions if left to only those ingredients would have been nice, but the gravy puts it over the top. It's too heavy with the gravy, egg and cheese. Not sure why they kept adding components, they should have stopped while they were ahead. I have to emphasize, it isn't bad or has a bad flavor, it's just too much. read more

This is really more like a 3.5 but rounded up because of the Say Yes to Michigan shirts the crew was wearing at the Dearborn Food Truck Rally. I got the Bacon mac and thought it was pretty decent. I would eat it again, but next time hope it would be a touch cheesier and slightly less runny. They did have a wait of about 30 minutes but at least we knew everything was made to order. I like the "cluck like a buffalo" mac. Its good, hearty, but not mind-blowing. However to make it great at least 50% of people would then refuse to eat it. Imagine... less creamy... a sharper cheddar... a bigger helping of blue cheese to the cheese mix; a spicier, smokier buffalo sauce. More awesome, but less commercially viable. They have a great selection of creative mac and cheese dishes. The mac and cheese itself is very good. They use the curly noodles which help them hold more cheese. The cheese is not overpoweringly cheesy or greasy. It has a nice, light flavor to it which is great for all the added toppings. I personally appreciate the not so fatty taste to it. I have only eaten here once but will be back. The time I did have it, I had mac and cheese topped with pico de gallo, baby cilantro and chorizo. I skipped the sausage and it was very good. Papa Smurf is delicious- mac and cheese, shredded parmesan cheese, caramelized onions, and mushrooms. I also tried the Oxtail Pho! The noodles were a bit too al dente for my taste, as when I eat pho at most Vietnamese restaurants, the noodles are more soggy. The oxtail was very tender, and delicious! They are generous with the oxtail (they put two in mine! yum :) and I like how they put the toppings (cilantro, thai basil, green onions, bean sprouts, jalapenos) separately from the bowl of pho. One thing I would recommend is to use bowls with a secure cap similar to the mac & cheese because my soup kept spilling having to walk all the way from warren/2nd to the student center of Wayne State University! broth was good, but oily (due to the fat from the ox tail) for my taste. I just had the opportunity to try the Mac Shack's mac and cheese and it was soooo delicious! My boyfriend and I visited while at the Dearborn Food Truck Rally and it was fantastic. I had the Papa Smurf mac and cheese, which came with caramelized onions, mushrooms and big shavings of Parmesan cheese. My boyfriend had the Bacon Made Me Do It mac and cheese and it was definitely our favorite - the huge pieces of bacon combined with the pasta was so yummy!! I'm a huge fan of food trucks even though the prices are generally jacked up, but it's so worth it, especially for food that comes out of the Mac Shack. I got a dish called "Papa Smurf". It's definitely not blue, but it does have caramelized onions, mushroom, and shaved parm cheese on top of what's already an awesomely gooey mac & cheese. I was walking around Eastern Market and I stumbled upon Mac Shack, a Mac 'n' Cheese only entry into the food truck craze that is sweeping the nation second in speed to the zombie apocalypse. For $7.50, you can grab a perfect-sized lunch on the go. On this chilly morning nothing sounded better than a hot bowl of comfort food with a twist. So the Cheechs' Trip was the answer: chorizo, jalapeno, fresh pico, spicy cheese. Chorizo can be tough to work with because you only need a little to go along way, and they get the mix right. Anything more and it is too greasy. I like spice and this was just the right amount. They do have Amaze Balls, which is worthing mentioning for the name alone, but I am too old to eat mac n' cheese rolled into a ball and deep-fried. OK, I lied, they are delicious. Their website (www.macshackmichigan.com) let's you know where they are going to be for the week, so you can stalk, er, find them where ever they go. To Recap: The Good: 8 different variations on Mom's good old fashioned comfort food. Throw in Amaze Balls and two different options for fries (garlic & parm or cheese & bacon) and you have a little slice of heaven on the street. For starters, macaroni n' cheese is a stand alone dish. It's also NOT a meal, contrary to popular belief. The extra's and "add ins" just aren't necessary, in my opinion. Needless to say, I've not tried the mac 'n cheese because honestly none of the options look appetizing to me. The company I work for however, has had them come to our offcie twice (as well as their partner El Guapo Grill Food Truck). The first time The Mac Shack came they ran out of fries. But how? Considering the majority of the patrons were ordering a variety of their odd versions of mac 'n cheese, how did they run out of fries? For several of my co-workers, fries were all they wanted. Well, much to my disappointment when the truck came to my job today they didn't have fries at al. What's worse is they didn't seem to care too much that they lost customers for not having fries. I'd think that they'd want to not only ensure that they had fries but that they had an abundance. I now know that the next time I get an email stating that they're coming to the office not to even waste my time! read more

As far as food trucks go, Mac Shack is one of the most appealing options I've seen, because it's a gourmet spin on a classic comfort food, it's easy to eat (unlike some sandwiches- I'd prefer to not wear my lunch around the office for the remainder of the day), and their prices aren't terrible (at least, in comparison to other food trucks). And let's not kid ourselves here- who doesn't like macaroni and cheese?! Mac Shack parks outside my office pretty frequently. I ordered The Bacon Made Me Do It, which is their signature mac and cheese topped with bacon, tomatoes, and green onions. The bacon was deliciously crispy (because, if the bacon is going to be soggy, what's the point?). The tomatoes were just chopped hothouse tomatoes, which didn't add very much flavor, so I think I would have enjoyed grape or cherry tomatoes better (particularly if they sautéed them!). Oh well. It was good, but didn't knock my socks off. Let's just say that if the Mac Shack truck is parked outside my office building, I liked it well enough to eat there again, but I wasn't so impressed that I'd ever feel the need to hunt the truck down. read more
