I ended up going to this restaurant because it was Sunday and the most famous restaurant in Ragusa, "Duomo" was closed. Oh, my, was I in for a treat! This ended up being one of the finest dinners I had in years!
The restaurant is located inside a cave, but the setting is wonderful. It is small. The maitre'd and waiters were all superb: they knew everything about the menu and explained it in good English.
There was 5 different kinds of bread, including a knock-out bun with sesame and cocoa chips! All dishes were immaculately prepared and served.
For a starter I had one of their specialties: a rabbit sausage prepared in a classic Sicilian way, but with the Chef's unique twist. The Chef came out and introduced the dish as it arrived! It was arguably the best rabbit dish I've ever had.
First course was black ink pasta with octopus and sea urchin. Sea urchins tend to give dishes very "sea-like" flavor - almost like a sea-weed. To balance the strength the Chef ingeniously added ricotta cheese that soothed that flavor.
I ended up with succulent lamb in a sweet sauce.
For a desert, the Chef made a special dish of wine grapes that were somehow made into a sort of jam mixed with cream and nuts.
All dishes were served with fine selected Sicilian wine.
In a terrific little trick, they brought me a hot towel rolled into a small cylinder. As they poured hot water over it, the cylinder expanded! Very nice touch!
