    My husband got me a cooking class for my birthday and I was excited to go! I had never done a…read morecooking class before! We drove out to the culinary institute and were excited to get started. The class we were doing was New England cuisine. We thought we would be cooking lobster, clam chowder and other seafood recipes. When the instructor started talking and handing out the packets of recipes, we were surprised with the recipes (beet salad, chowder, chicken, root veggies, johnny cakes). We had to pair up with people we did not know and then each person in the group had to choose a recipe to cook. I chose the clam chowder. It took me about 20 minutes to get all my supplies because they didn't have everything out (food and cooking utensils). The instructor came around and said I was super behind...well thanks for making me feel the pressure! So I rushed to get everything in the pot. It looked like my husband and the others were rushing as well. I did NOT like this. It is supposed to be fun. We aren't cooking students and we aren't familiar with the kitchen. They kinda just threw us in the kitchen and said OK start cooking. We plated our food, along with the other groups, and ate our food. Overall it was fun, besides feeling rushed, but I did learn a lot.

All of the Instructors are certified and have been Executive Chefs or opened or owned their own restaurants. They are all deeply passionate about food and it conveys through their teaching. My favorite instructor has left the school, and while I was greatly looking forward to having him as an instructor for his specific area of cooking, I'm completely confident in the knowledge I'll learn from another instructor based on the standards set forth by the faculty. Courses are laid out in a comprehensive manner and are aimed to to prepare you to work in real kitchens. The school has a wide array of connections to some of the best local restaurants, and ones in other states, to help you get the off site training that you want most. The school gave me the opportunity to get in the place that i not only wanted to train at, but work in after graduation. And the certifications you get pay for themselves. i will say that the fast pace of the school is hard for some to keep up with. A lot of information is packed into ten days over five weeks. But it does tend to help adapt to the quick pace of most kitchens. Some of the classes are more web based than others, but no matter what the class, all the information can be accessed online with power points and lecture notes. another drawback is that it's affiliated with ECPI. Classes like English and Algebra are done through ECPI. The instructors are not a part of CIV and are therefor not held to the same standards. For legal reasons, i will not mention any instructors names, but at least one has consistently been reported and has the same students SHE FAILED TO TEACH put back into her class. But that's ECPI, not CIV. Overall, I firmly encourage anyone who is looking to get started on the path of becoming a Chef to Check out CIV and see if it's for them. Definitely a great stepping stone.

    I am writing this review of the Deep Creek Landing Marina-Keffer Hall to warn potential renters of…read morethis unethical company's management practices. My mom was looking for a venue for her husband's 80th birthday party on Labor Day weekend. I had called some other venues but on that weekend many of them were already booked. My mother panicked and was desperate to find something. I called and said this place was available for $1,300 based on the marketing material that they had emailed me via the Knot. After my mom looked over the venue in person, they said the price was $3,400 because she was booking more than 60 days in advance. I thought it was a little odd that nowhere in their marketing materials stated that she had to go with the more expensive package given she was booking so far in advance but now I wonder. She signed the contract and I paid them $1,700 (50% of the total amount) + $250 deposit. Immediately, after signing she asked if they could suggest some caterers, DJ, or bartenders. They said no! The next morning less than 24 hours later, she reached out to them asking to cancel and express concerns about the safety of the venue given its close proximity to the water and that small kids were going to be there. She also reiterated her needs around caterers, DJ, and bartenders and magically they replied with a list of recommendations although the day before there were none. Also, they quickly stated that they had encouraged her to take some time to think about it before she had signed the contract. Also they stated all she would get back was the $250 deposit even though it had been less than 24 hours since she had signed the contract and it would not financially cost them a thing to reimburse her since she had booked so far in advance. The General Manager then sent a second email back stating that she had put the $250 deposit in the mail. As of yet, my mother has not received even the $250 back. The General Manager also stated if we didn't post this review, she would try to give us the rest of the money back if they were able to book someone else for that August date. But how would we have known if they were really able to book the venue? It's clear that they must be having financial issues or trouble booking the space since they will only return $250 of the $1,950. My mother expected to lose some of her deposit but not $ 1700. I asked them to show some compassion and asked for 75% of the money back but they refused! I do not know if my mother's age or color or their desperation for money that warranted this type of treatment but beware! Please learn from our experience and think about how this company works! If you book a flight, you have 24 hours to cancel with no penalty. If you buy a car in Virginia you have 3 days to return it with no penalty. Several other similar businesses we reached out to expressed that life happens and things change that even though they had similar contracts they would be willing to reimburse (up to in some cases, 2 weeks before the event) with no or less penalty. Not Deep Creek Landing Marina-Keffer Hall! It makes me wonder what would've happened if someone accidentally spilled something on the floor or if we wanted to change the hours of the party, how difficult and rigid would they have been. If we had decided to work with them would they have continued to nickel and dime a 70 year old woman as much as they could? These people are heartless and unethical! Do not do business with them!
