We ate outside on the covered patio -- beautiful, with the olive trees outside and a perfect outside temperature. All the tables are set with festive, colorful glasses and dining ware. We were immediately greeted by the hostess who seated us and explained the extensive menu. There are multiple menu options at differing price points and choices. My wife started with a fresh chilled pea velouté. I had the perfect egg on cream green peas. Simply beautiful and very tasty. For the main plat a Roasted saddle of lamb served pink, with a potato pancake, and fresh vegetables, was perfectly cooked, tender and delicious. How the chef put together a mosaic of Red Candied Salmon, with Nori leaves and squid ink, with citrus and avocado mayonnaise was another work of art, in flavor, composition and taste. Dessert was a candied nut and honey with creme Anglaise and fresh candied strawberries with sorbet. Satisfying, beautiful and exceptional way to end the meal. The wine list is extensive featuring wines from the local Cote du Rhone area. To add to a memorable meal, we met the man at the next table and shared our thoughts on each course. Turns out he is from Switzerland and said for the last 14 years he has been coming back to La Charette Bleue at least once every year because it is the best food around. That is quite a complement. I wish I was him and could go back here again and again.

Tyres for appetizers we had some fois gras and a three-layer gazpacho that comes in in a glass that you sip like a drink. The patty was delicious and very rich, well paired with some chutney on the and crispy bread. Dispatchio was slightly spicy and good. We had a glass of white to pair with the pate in it was it good idea. My meal was a beef fillet cooked rare, it seems no matter how you order it in France they always cook meat rare so you have to ask for anything other than that specifically. Even then you may not get it the way you wanted even on the second try. Meat was well on the outside and delicious flavour on the inside, paired with a small serving of mashed potatoes this was excellent. We also the poultry main, a bird in between Turkey and chicken as it was explained to us. It had intense flavour has something for me to do here in Europe, like a dark meat chicken or turkey. For wines they only serve the rhone valley varieties as you would expect. We had a nice read that paired well with our meats. For dessert I had the Opera, a chocolate layered deliciousness. Espresso was ok. The service was outstanding, much more attentive than other French restaurants yet not annoying.
