This spot is in the old town part of…read moreNice, and it had a line of folks eagerly waiting their chance to order from among the various options, which included their traditional local classic socca, which is what our guide brought us there to try, and what appeared to be a selection of flatbreads, and thick crust pizzas. We got a chance to see how they make their socca, which is apparently just the same flour used for couscous, mixed with water, then placed an big, round, metal baking dish lined with olive oil, and then oven roasted for 3-5 minutes. Once done, it's just lightly seasoned with pepper - our guide said no other spice, otherwise it's not authentic in terms of local custom. I wasn't the biggest fan of the socca, though it wasn't bad, and their pizzas on offer all looked amazing - there's a reason they had the long line that they had. Next time in old town Nice, I'd give them a try!
