My husband and I shared the Liver, pork chops, and white asparagus. All were tasty but the Liver was by far the best thing I tasted while in Paris. I wouldn't necessarily consider myself a fan of liver in general and this completely changed my mind. It was cooked to perfection and the mixture of flavors was spot on. The only issue we encountered was when we were presented the check at the end of the night. We had proactively asked that it be split by couples, however that didn't happen off the bat so it took a bit longer than usual to check out.

After our first glass, our glasses remained empty for nearly an hour across several courses despite repeated requests. Meanwhile the sommelier continued serving other tables and even socializing with coworkers while our glasses sat empty in front of us. Because we were seated at the counter, the entire interaction was visible to nearby diners. There were some well-prepared dishes, but the inattentive service ultimately defined the experience.

However, the Astroblonde (blonde pils) and Atomique (brunette) were very good. (BTW, I have never heard of a pilsner described as blonde, but the website and a different restaurant's server described it this way. I am going with it.) Bar Demory has draught beers. It features a long, narrow casual bar seating area and bar tables. In the back, there is space for private parties and for a DJ. Interestingly, they have a decibels meter above the DJ platform. Downstairs is a kitchen, free pinball machine, and the bathrooms. Those bathrooms were quite nice for a bar! Happy Hour ends around 8pm or so. At any point in time, you can order food here. They specialize in sausages and have a number of flavors. You can order them in a sandwich (like a hotdog, sort of) or two to a plate with a side of your choice (potatoes and cheese or delicious lentils). My plus one and I shared the plate: La Coquette d'Asia (chicken-based, Thai basil, ginger, citron served with a sweet spicy sauce) and Peggy des montagnes (ham and cheese). He loved the Asian one, and I loved the Peggy. Go figure. Order upstairs at the bar. Within so many minutes (10 for us), the food is ready for pick-up downstairs. Tables are hard to find during happy hour. UPDATE: Two months later, my guy and I are still missing the food, beer, and pinball machine. It's worth the visit!
