Food was absolutely delicious, the four of us tried the standard menu (51€) instead of the daily (38€), and were able to acquire each dish available for the evening from the main menu.
For appetizers, the asparagus was a very strong dish, with spring herbs and floral tones through out the refreshing asparagus. The veal was prepared perfectly countered with the yogurt.
Lamb was very tender with two cuts deconstructed. The demi glaze was perfect with the lamb. The Talbot was cooked perfectly. Pheasant was great, also deconstructed, white as a filet and dark as a tartine.
Really I don't think you can fault the food. The issue comes from the service and understaffing. I felt like being seated upstairs was a curse as there was no attention given to us other than ordering. Dinner reservation was at 7:30p (opening) and the main dishes weren't served until 8:20pm. Then at 9:30p, we had to ask our dishes to be taken. There was still cheese, followed by deserts, to be served.
If any judges from Michelin or Gault and Millau had undergone such service, I doubt they'd get their recognition, just on service alone. I'm going to be nice because, again, the food was spectacular. The service was light and absent for most of the night. Who ever was working was kind but.... 3.5 hours for a 3.5 course dinner is not acceptable.
