Get there early or you'll end up waiting. Don't drink? Too bad; if you don't get there early, you'll wait. Salad bar (which I love), not here. Muddled old fashioned, not here. Cozy atmosphere and solid customer service, definitely in the right place. We arrived with a veteran couple. They got us there early, understood the ordering routine and found us a place to sit. We ordered appetizers and drinks. Definitely get the onion rings as they are incredible! Drinks were solidly poured and reasonably priced. We ordered and were surprised by how quickly we were seated. The vegetable tray and bread basket were good. Our meals came out shortly after we were seated. The salads were nice sized and the blue cheese dressing with crumbles was great. Our entrees (ribeye, tenderloin with chicken, prime rib and fish) were all sized nicely and prepared as ordered. My dining partner said the chicken was some of their all-time favorite. My ribeye was seasoned well and cooked perfectly. Our dining partners loved their choices. Overall, I'd really like to give 4.5 stars, but my pals at Yelp still don't trust half stars. Food: The menu offers a nice selection of starters, à la carte options, and full dinners. The ability to add a wide assortment of sides is a great way to customize a meal to fit your tastes. We started with a couple of specialty cocktails, the Whistle Stop Old Fashioned and the Hemingway Daiquiri. Both were nicely made and delicious. We do not normally order bread service, but my wife was famished, so we started with the House Special Duck Fat Parker Rolls. Wow. They were amazing. The crust was dark, crunchy, and full of flavor. They came with honey butter and a bacon jam spread. Next time I might try the Steakhouse Brisket Burger and substitute these rolls for the bun. For our meals, we ordered the Salmon à la carte with a Caesar salad and the Wagyu Short Rib dinner. The salad was nicely made with a light and flavorful dressing and good presentation. The salmon was excellent. It was melt in your mouth tender with a beautiful pan sear, which is a perfect combination. The Wagyu Short Rib was a different experience. This was my first time having this "Denver" cut of short rib. I was expecting a very luxurious, rich texture, but instead it was fairly lean and a bit dry. The outside was nicely charred and had a slightly ashen flavor, which was not unpleasant, just unexpected. On its own, the meat was a disappointment. Paired with the risotto and bordelaise, it improved considerably. Still, it is not something I would likely order again. We took our leftovers home and still had room for dessert, so we shared the Banana Bread Pudding. It was delicious, though the texture was more muffin-like than the dense, creamy style we usually prefer. The rum raisin ice cream was a very nice addition. Service: Like the rest of the service at the American Club, it was very good. The entire evening felt relaxed and well paced. Water and drinks were always attended to, and our server was knowledgeable about the menu and helpful when explaining items. My only small issue was the tone of the service. It was extremely upbeat, almost to the point of feeling a bit scripted or performative. I love enthusiastic and friendly service, but at times it did not feel entirely authentic. This is a minor criticism in what was otherwise a very good experience. Atmosphere: Like the rest of the hotel, the Wisconsin Room is full of character and charm. There is a strong sense of history in the space, especially knowing it was once the cafeteria for early immigrant workers. That adds a humbling and meaningful layer to the experience. The room was still decorated for the holidays, with tasteful greenery and ornaments. We would definitely come back for another meal.
