We passed through Fort Stockton a…read morecouple of years ago and had breakfast burritos on the way out of town after we had stayed the night. Today we stopped for lunch burritos. I thought the breakfast burritos were really good, but they did not compare to the lunch ones. After having lunch, I knew I needed to leave a review. One item of note, the burritos are pretty small so I would recommend ordering at least 2. My wife on the other hand was satisfied with just one. The 3 burritos with extra cheese totaled $16 and change, so I think that was a fair price for lunch. especially as good as it was. They have a great selection of different meats. Both my wife and I had a Chili Verde Burrito with extra cheese. The Chile Verde had a good kick to it but was not too hot. The meat was super tender. You could tell it had been cooking all day. Great flavor and like I said the spice level was just right. The burrito was wrapped in foil, so when we got back to our RV, it was still blazing hot and had given the cheese time to fully melt. Delicious. I also had a spicy Chili Guisado. For those not familiar, it is a beef slow cooked in brown gravy. While it did not have the kick that the Chili Verde did, it still had a little bite, and with the salsa it was perfect. But the flavor was spot on. Another delicious option. We are here for another couple of days so its entirely possible that I might be back to try a different selection. They also have chicken, ground beef and potato and a brisket offering. And I'm sure I am probably missing something, so check their website for the latest menu. Other than that, their menu is pretty limited so don't expect much, they are after all called "Mingos Burritos". I always say, if you do one thing really good, you don't need to do a whole lot of things somewhat good, and they make a really, really good burrito.

They actually have a drive thru as well, but we decided to go inside. It's definitely family owned and they were very friendly to us. Our order was taken and started on right away. The kitchen is open so you can actually see them preparing your food. The tortillas are huge! The old menu pics on here say the burritos are $3, but they are now about $6 and still worth it in our opinion. I got a pork in green chili sauce and it was delicious. Moist, tender meat in a very savory and slightly spicy green sauce. The giant tortilla held up well. The barbacoa one was one of the best I ever had! Lots of lean and slightly crispy meat that didn't give off too much grease. With their green sauce, it definitely hit the spot! The tortilla again, held up amazingly to the greasy contents. Wife had the chile relleno one and boy did it surprise us. Very well done chile relleno with a delicious maybe asadero cheese and a great breading! Wife got a loaded quesadilla as well and me another brisket one that we both have yet too tackle, but we will down the road! Worth a stop. Love this little spot.

The portion was smaller than I expected, but the flavor didn't disappoint. The pork was tender, and the green chile sauce had a deep, rich taste that reflected hours of slow cooking. It carried more heat than my palate prefers, but spice lovers would likely appreciate it. The accompanying rice and beans were less impressive. The Spanish rice had a fairly standard flavor but was noticeably dry. The refried beans were also dry and seemed as though they had been sitting for quite some time before being served, which took away from an otherwise flavorful entrée. The restaurant itself was clean, colorful, and had a lively atmosphere that made it an inviting place to dine. Prices were about what I would expect for the meal we ordered--fair, though not a standout value. Overall, it was a pleasant stop with friendly service and a well-prepared Chile Verde, even if a few of the side dishes fell short.

We also ordered a pastor quesadilla, which had great flavor but was a bit too cheesy and heavy for my taste. The tacos were served with onions, cilantro, limes, a jalapeño, and salsas, while the quesadilla came with lettuce, tomato, and pico de gallo. Overall, this was a great stop during our road trip and a refreshing change from the usual chain restaurants along the highway. The service was quick, the outdoor seating was comfortable, and the tacos alone made it worth the visit. I would definitely stop by again if I'm passing through the area.

They did have specials but unfortunately they didn't honor them. We asked for two chicken fried steaks which were early bird specials Monday thru Friday. We also had the queso and chips with came with a side of salsa. The queso was nice and cheesy and the salsa had some nice heat to it. The chicken fried steaks were small and to thin, it was served upside down on a bed of white gravy. The plate came with a side salad and we ordered the mashed potatoes. The salad was fairly small in my opinion. The plate which should have been $10.99 ended up being $15. In this case the food was not worth the money. Portions are small. I did however liked the queso, salsa, chips and chicharrones are a nice touch. The sweet tea is really good.
