THE BAD: Unfortunately this is the most TASTELESS Mexican food I've ever had. Everything from the meat to the beans and rice to the chips and salsa were all VERY bland. Our server was also not very nice. If you are hungry and just passing through it will fill the hole but you'll likely feel robbed when you leave.

But, in all fairness, I've eaten at no fewer than 200 different Tex-Mex restaurants in my lifetime. First, as one reviewer stated, this is very much a New Mexican-style restaurant, although they try to get there with the Tex-Mex. What does this mean? Quite simply, this place uses red sauce (vs. chili gravy) for enchiladas. It also offers stacked enchiladas with an egg placed on top, which is true New Mexican. Beyond that, the menu is quite varied. I'll start with my cheese enchiladas with red sauce. The sauce was spicy as hell, which was wonderful. The enchiladas themselves were a disappointment because they used two corn tortillas to roll them with the smallest pinch of cheese I've experienced in a while. -- I'm not sure about my dad's chile relleno and beef enchilada with green sauce, but he really enjoyed both. The rice and beans were pretty much par for the course. Not bad but nothing special. The salsa here is phenomenal. There's just enough onion and cilantro to make it memorable. It's served cold, which is a must for me, and it has some serious bite. Service here is really friendly and efficient. The atmosphere is old school: cheap paneling and trite "Mexican" decor. The men's bathroom is almost as dark as a movie theater. I don't get to this area often, but I would certainly eat here again any time I do.

One item of note, the burritos are pretty small so I would recommend ordering at least 2. My wife on the other hand was satisfied with just one. The 3 burritos with extra cheese totaled $16 and change, so I think that was a fair price for lunch. especially as good as it was. They have a great selection of different meats. Both my wife and I had a Chili Verde Burrito with extra cheese. The Chile Verde had a good kick to it but was not too hot. The meat was super tender. You could tell it had been cooking all day. Great flavor and like I said the spice level was just right. The burrito was wrapped in foil, so when we got back to our RV, it was still blazing hot and had given the cheese time to fully melt. Delicious. I also had a spicy Chili Guisado. For those not familiar, it is a beef slow cooked in brown gravy. While it did not have the kick that the Chili Verde did, it still had a little bite, and with the salsa it was perfect. But the flavor was spot on. Another delicious option. We are here for another couple of days so its entirely possible that I might be back to try a different selection. They also have chicken, ground beef and potato and a brisket offering. And I'm sure I am probably missing something, so check their website for the latest menu. Other than that, their menu is pretty limited so don't expect much, they are after all called "Mingos Burritos". I always say, if you do one thing really good, you don't need to do a whole lot of things somewhat good, and they make a really, really good burrito.

The chicken fried steaks were small and to thin, it was served upside down on a bed of white gravy. The plate came with a side salad and we ordered the mashed potatoes. The salad was fairly small in my opinion. The plate which should have been $10.99 ended up being $15. In this case the food was not worth the money. Portions are small. I did however liked the queso, salsa, chips and chicharrones are a nice touch. The sweet tea is really good.
