While on a tour, my tour group and I had some time to break for lunch, shopping, and sightseeing. I passed by Couteaux Fourchette and didn't immediately walk in as I wanted to explore the other dining options available. Well, let me be the first to tell you that there aren't too many options in this tiny town. I circled back around and the Gentleman whom I assumed to be the manager welcomed me immediately. The restaurant is tucked away in a small alleyway that's located right in the center of town. What I've learned about European alleyways is that they are nothing like American alleyways. You want to find those hidden alley gems when you see them.   Their cute little alley patio space is super relaxing and enticing. I sat on the patio and enjoyed a glass of some delicious French white wine that I had never had or even heard of before. As versed as I am in American wines, I must admit that I haven't had much exposure to Southwestern French varietals. This was a new experience for me as was the delectable meal that I consumed whilst I was here. Pyrenean Pork confit simmered in French onions over potatoes and topped with melted local cheese. When I tell you that this pork just melted in my mouth... just wow! It was so tender and delicious. It was like juices from the pork and onions saturated the potatoes underneath because they were super moist and flavorful. Never would have thought to put melted cheese on top of this concoction, but it was literally the best part of the entire meal! Swirling my fork around in the cheese and pulling those lovable strings of gooey goodness was just... mmmm! Loved every second of this meal. Every. Damn. Second. I guess the other passerby's noticed my joyous facial expressions as I basically dove head first into this mouthwatering meal. They all started swarming into the restaurant, and a few of my tour group mates joined me outside and ordered lunch there as well. I love that this place has food specials for tourists. The service was great and the ambience is so beautiful. You will definitely get the true French experience here! I'm still dreaming about that delicious food and wine. Not sure that I'd make it back to this place anytime soon. But if and when I find myself back in Ax-Les-Thermes, I'd be headed here again no questions asked.

    À fuir. Couette hors de sa housse... mais lit bordé quand même. Du jamais vu (et je travaille dans…read morel'hôtellerie restauration depuis sept ans... même les dortoirs de refuge de montagne sont plus propres que le fut notre chambre). vous comprenez donc, je suis une alliée, je suis la première à savoir combien les métiers de nettoyage sont durs. Mais ne jamais recevoir d'excuse de A à Z (lire jusque fin) est juste une atteinte à l'éthique de l'hôtellerie, une rupture du contrat de confiance passé client-hôte quand on paie 73€ pour une chambre. Je veux dire, soit on fait un lit soit on le fait pas !! mais on le fait à moitié ??!!! c'est quoi ça ?? Aspirateur pas passé (poils en tout genre partout, miettes des précédentes, et même un cordon de la serpillière blanche..), inox salle de bain tachés, vitre douche calcaire, étagères poussiéreuses. Pour couronner le tout, la cuvette se détache et est bancale. Dès que l'on s'assoit, gros bruit de céramique. Chasse d'eau bruyante. Gros tube de cuisine qui remonte sur balcon fait aussi beaucoup bruit. Cadre de fleurs est moche et délavé mais ça c'est un détail. Nous sommes arrivés vers 18h30 mais étions fatigués de notre rando en haute montagne et avons siesté. Mon partenaire me dissuade de demander de passer l'aspirateur parce qu'on ne reste qu'une soirée et avons le train à 6h40 le lendemain. J'ai signalé l'aspirateur non passé après sieste et de petites courses finalement. Monsieur de l'accueil prend note, semble déçu sans pour autant présenter ses excuses. Bon,.. c'est déjà peu commercial. Puis à 22h30 en allant dormir je découvre la couette rêche. Il est trop tard et le lendemain nous partons à 6h15 de l'hôtel. Par téléphone je demande si dédommagement financier possible. "Je ne peux pas vous le garantir. Je prends mes dispositions et transmets l'information pour que ça ne se reproduise plus. _ Entendu. Dans ce cas je prends mes dispositions de cliente également et laisserai mon témoignage sur Booking, google map, TripAdvisor, etc". Seules choses positives: la vue du balcon, le savon douche, la wifi, proche de la gare à pied, c'est tout.
