We were traveling the Canal du Midi and stopped in Columbiers for the night. We were looking for a nice restaurant and found that this was one of the few that was open on a Sunday night off-season. Despite not having a reservation they were able to accommodate our party of six. While we were choosing from the menu they brought us some delicious small green olives and crustini with cream spread. I'll only hit a few of the highlights from the dishes that our party had. I had the sea bass carpacio which was served with a very delicate Olive oil, a pepper grinder and fleur d'sel, and a couple of Radisson leaves and roasted Italian peppers. The fish was flavorful and perfectly fresh. Others in our party had the warm fois gras with pears which was delicious. The goat cheese salad was also delicious and unexpected being more a warm crispy cheesy, bacon filled confection. Three had the St Jaques. Perfectly cooked scallops with a beet butter sauce. The lamb and beef also got high praise as did the half pigeon. Dessert brought more fine examples of great cooking. The pear Belle Helene was a lightly poached pear enrobed in dark chocolate sauce, sprinkled with toasted almonds and accompanied with a perfect quenelle of vanilla ice cream. The plum tart and the Grand Marnier souffle also got raves, as did the chocolate crispy confection which featured an extraordinary crisp, and a multi layer mousse cake. There was but one server, but he kept up with the entire small dining room of tables beautifully. On his recommendation we had two local bottles of wine, one red and one white. Both were very nice. This restaurant is part of a hotel of the same name and suggests that this may be a great place for an escape.
