This Bacolod institution has had its run, but I think it's losing its long-standing direction in class and size. Split into three strata in its client base - high-end, medium and lower-end - I think L'Fisher had a great idea here, accordingly:
1. high-end suites get carpet and larger rooms from 10,000 pesos and up per night, and the huge breakfast buffet;
2. medium-level gets ceramic tiles in a fair-sized room from 1800 to 5000 pesos up, and the same classy breaky buffet;
3. low-end rooms don't get windows or breakfast, therefore starving the senses somewhat, at least for the time you are in the room.
But they do honour senior's discounts if they can be substantiated even for those of us who aren't native pinoy. Kinda nice.
Why only 3 stars?
Unfortunately, the usual, at least in the Chalet Tower section...
* parking is quite far from the entrance, all on rough stones and gravel that are not at all kind to the ankles, shoes or the wheels on your bags.
* immediately the shower nozzle started spraying water all over the bathroom as if dancing to a crazy tune, causing me to break the cheap plastic joint as I grabbed it to stop the churning.
* in the gym on the deck floor (4th floor), the main machine is broken, leaving only a few free weights and a couple treadmills for use. Not a gym can this thing be called!
* on the same floor, "Cocoon Luxury Spa and Wellness" charges 2x the going rate out in the city despite offering 30-50% promos on inflated service prices. As a client who has had over 2000 massages in the past 26 years in both North America and Asia, and as a person trained by an RMT, the services here are likely stock for the industry in the Phils and nothing special at all, especially at the fancy prices.
* our dinner was staggered with a 'finesse' that didn't at all surprise: the first dish arrived 15 minutes before the other one, and became cool as my wife waited for mine; mine arrived without its mashed potatoes, but when mentioned were treated only to an apology; there was a side gravy different from the 'rosemary' chicken sauce, and more suited to pork than chicken, and pretty tasteless. All in all, the food was just passable in flavour and texture!
We are not sure who is supposed to be the lead cook here, but he or she just doesn't lead the kitchen at all well, even when it's relatively slow. Meanwhile the somewhat inexperienced poorly-trained staff smiled and apologized profusely, but didn't seem to know anything major was wrong. Likely their college and/or their supervisors have seriously short-changed them on training!
* an evening dining music duo was quite good: with a rhythm guitar player, the young woman percussionist had a lovely voice and did a great job on some classic somewhat-laidback oldies.
* an early morning swim in a sizable roof-deck pool kickstarted the day. A true plus.
* to us, the 'star of the stay' was the really large breakfast buffet: choose between hotcakes, french toast and waffles, several pinoy and other breakfast meats including bacon, langonisa, fish, etc., two rices, congee and noodle soups, eggs done to order (easy-over, scrambled, omelette, etc.), coffee, tea and juices, with more coffee and assorted fruits voluntarily brought to your table by the friendly staff.
Oh yes, please wear non-beach attire, or they may try to cover your male shoulders with a really tight waiters jacket!
This aging relatively-elegant hotel for a very long time has been the class of Bacolod, the 'best accommodation' in the city, but if it is, it doesn't show it on several levels.
A good cue is to expect little at any venue in the Philippines - hotels, restaurants, malls, spas and salons, and many other businesses - and be pleasantly surprised when they get more things right than not. It seems that on-the-job training and consistently high-end supervision is sadly lacking just about everywhere in the country: hence that semi-sweet smiles accompany the services.
But these kids are virtually powerless to change anything that diverges from 'policy' even at the cost of a high standard of service. Too bad but I think that they are doing their level best largely alone, for it is likely again that disengaged owners are only still in the game for the buck and status, and certainly not to ensure that their property remains outstanding in its field, and a really great little mecca for the travelling public who spend lots of cash in such venues often for a dwindling return.
Too bad that we expect excellence at such a place, and won't accept sloppy or uncaring quality and service.
