Off the beaten path but you know they're doing something right since 1901 when there's a line outside and it's packed inside and we were probably the only non-Italian customers. Service was amazing very friendly people. And the best part of it, Domino's pizza is way more expensive in the US . Got the Montanara Starita which the pie is Double cooked by first frying the base and then baked in the oven, seasoned with Neapolitan meat sauce, smoked provola, Pecorino Romano DOP, basil.....Mama Mia!! Also got the Romana which is Tomato puree, fiordilatte from Campania, anchovies in oil, Gaeta olives, basil....delicioso. And to top off our meal..we ordered the Little Angels fried which are born from a recipe from Don Antonio's mother, who loved to eat these small cylindrical pieces of fried pizza dough sprinkled with sugar. They are ideal both as an appetizer, accompanied by fresh tomato and arugula, and as a dessert, garnished with Nutella or pistachio cream. Be careful though, because they can be addictive!! As soon as you enter you notice the contrast between the modern design and the tuff cave that hosts the restaurant, and despite being very technological with a TV screen next to each table (with remote to select your favorite show or even USB port to play a presentation during a work lunch) the flavors you're going to taste are very local and traditional. In fact, besides all the typical Neapolitan dishes and pizzas, Alba offers a selection of "gourmet pizzas", made with local biological ingredients selected to enjoy the real taste of Campania. We had two different kinds of pizza margherita: the Corbarì (with local red cherry tomatoes and buffalo mozzarella) and the Pomo d'Oro (with local yellow tomatoes and mozzarella. Both tasted delicious, but I may suggest to try the yellow tomatoes as you won't find them easily elsewhere. Together with these pizzas we enjoyed a tasty weiss double malt beer with a slightly fruity flavor, recommended by the waiters as the best fit for the food we were having. And trust me the union was really perfect. To sum it up, amazing food and very good service. A place I will definitely visit again during my next trips to Naples.

For the…read morecomplete description have a look here (http://www.pizzanapoletana.org/public/pdf/disciplinare%202008%20UK.pdf) Yes, there actually is a regulation. even if the place is busy, just stay there, they will find a place in less than half an hour (that also means, on the opposite side, that it's better for you to get out from the place after your pizza, tables are continuously rotating). You can't see it, but they have another hall inside, you can reach it by passing directly through the kitchen! [I recall somebody was creating hygiene regulamentation laws in 1980 in Italy... well maybe I'm wrong.. still it's cool!] First delusion is coming with the menu: if you are telling me you are one of the few places producing the real pizza and bla bla bla [boring italian proudly talking about food] how come you have on the menu more than 15 types of pizza? Pizza should come in two versions, margherita or marinara, nothing else. So... what happens? yeah ok business is business but still.. I hate saying something and doing the opposite! Anyway, to the important stuff: it's pizza time! Ordering a margherita you'll receive a round, not much big, soft dough. Tomato, mozzarella, basil, everything seems just perfect. And actually it is! very soft, with a good baked border, no liquids around the plate but no crunchy dried parts, simply perfect! There is not that much to say, it really is one of the best pizza you can actually have in the world. The 4 stars are just coming from the menu: yes, I am that picky, if you was not so boring in telling me that you have the REAL, the AUTHENTIC and blablabla pizza I'd enjoy giving to you the 4 stars... but that's what you obtain when you are really annoying!
