They're a relatively small restaurant, but I've never had a wait to eat there. The staff are also very friendly in my experience. Fuku also does to-go orders if that's your thing. They serve a variety of Japanese dishes, as well as other popular Asian dishes (yes, they have boba tea as well). The cold soba is great on a warm summer day, but I think their ramen and rice dishes are even better. If you go to Fuku and aren't a picky eater/texture isn't too much of an issue, I strongly, strongly recommend trying their takoyaki (fried octopus balls). The sauce and garnish they put on top are delicious and pulls the whole appetizer together. But definitely make sure to wait awhile before getting a bite so they have time to cool.

I'm not sure how but the pork stayed crispy floating in the broth. The pork in mine was so juicy and delicious, I was sad once I ate it all. The price is reasonable and then portions are large. I had enough for lunch the next day. A great spot all year round d but especially when it is cold out.

My order - 4 bowls, 2 onigiri, a bag of chips, and two drinks - was all complete in about 5 minutes! My daughter got the Ponyo bowl (most of the menu is anime-themed bowls), and everyone else did a build your own 3 topping bowl. I was happy to see there was actually a vegan broth option, but pretty disappointed that there wasn't a plant-based protein option. (Disappointed by no protein, but also disappointed by the price.... I got my bowl w no meat, but the price was the same as the meat bowls.) Taste-wise, everything was pretty good. My 3 toppings were narutomaki , menma, and corn, and I added some crunchy garlic, black sesame seeds, and onion oil. The flavor from the crunchy garlic and onion oil was great! The biggest let down was I'm pretty sure it was just spaghetti noodles and not actual ramen. The right noodles make all the difference. The onigiri was pretty good. Would not order the kimchi chicken again, would definitely recommend the crunchy garlic pork, but I wish there was a vegetarian option for those too. It was pretty cold out when I stopped by (December), so I liked the hot tea/coffee options (all canned). The matcha latte was the perfect size for me and surprisingly not too sweet! So overall - was it the best ramen I've ever had? No. But also far from the worst. It exceeded my expectations for a small town AL ramen food truck. I'll definitely stop by again on one of my trips through.

Upon entering, I immediately felt as if I were taking part in a celebration as I took in all of the vivid colors and decorations that adorned the space. I was warmly greeted, and taken to a table that had been freshly wiped clean. My server was very sweet and recommended several appetizers to start my dining experience. She complimented my handbag and we shared small talk over the uniqueness of it. She also brought out chilled tap water that I requested and poured it into a small glass. I decided to try the lavender lemonade and I'm happy I did. It was glass of my favorite childhood drink served in a restaurant. The lemonade was sweet as if my mama made it and the lavender added just the right pizazz to the drink. Plus it was a pretty drink! I loved the fresh flowers that added an elegant touch. Now for the main course. I opted for the drunken uncle noodles with beef lunch special that includes a complimentary crispy roll. The roll could've been a tad bit warmer, but not a deal breaker. It was still tasty with just the right amount of crunch. The star was the drunken uncle noodles. They were absolutely delicious! The spices, the flavors, the tenderness of the noodles and beef were all superb! I've been thinking of this dish since I ate it and I can't wait to order it again and again! Events concluded somewhat early on Saturday and I wanted to make the most of my drive out that way, so I decided to drive a little farther to give Gordo's Way a try. TL;DR -- I'm gonna be making more special trips to Albertville. This restaurant is located on Main Street in Albertville. It's on the corner/end of the street. Street parking is limited but there's a large lot across the street that I took advantage of. They appear to only be open Friday - Sunday so plan accordingly! A few picnic tables are arranged in front of the entrance. The restaurant is small with room for maybe ~25 seats on the inside. You order at the counter. The menu is diverse with a lot of authentic Mexican and Central American dishes. Big focus on birria -- not just tacos, but pizza and ramen too. Service was exceptional! The young woman who greeted me at the counter was so friendly and nice. She immediately caught on it was my first visit and she graciously offered to explain the menu to me. She was exceedingly thorough - more than I truly needed but I didn't mind because she was so sweet - and she knew her stuff! If you're new to this cuisine at all, Gordo's Way would be a great place to explore because the staff will take care of you. They have several containers of aguas frescas, to include cucumber pineapple, horchata, orange pineapple, etc. I knew I wanted one but couldn't pick -- they kindly offered me a sample. The cucumber pineapple was perfect -- delightfully refreshing, not too sweet but not too cucumbery either, and so that was my choice. I ordered two birria tacos with a side of rice and beans to accompany my beverage. This was actually my first time trying birria. I've waited to try it because I wanted to try it somewhere I was confident would do it well -- reviews led me here. I wasn't disappointed. It was delicious: the beef was chewy, savory, succulent, so moist; the onions were crunchy but unobtrusive; the tortilla was thin and crispy; and the consommé for dipping was perfectly umami and surprisingly not insanely messy. The only thing that didn't completely knock my socks off was the rice. It wasn't bad, just kind of standard. The beans were, I think, charro beans -- definitely pintos, not refried. They were smoky and tender. Go out of your way to Gordo's Way -- you will not regret it.
