No Thai restaurant has told me before in the 20yrs I've been getting Thai. Needless to say this tip pays dividends and the noodles don't stick together or get overcooked. The waitress was lovely and tried her best, but when I asked if the kitchen could add a bit of curry paste or anything to bring some life to the soup, the response was simply, "that's how we make it." After 30 years in the F&B industry and having reviewed everything from local fish shops to Michelin-star restaurants, that kind of customer experience left me stunned. The waitress did try to salvage the situation by bringing a bowl of fresh chillies, but it didn't fix the core issue. When it came time to pay, I was told we'd still be charged full price for a meal I couldn't eat because it lacked flavour. My partner's dish also missed the vibrant, aromatic punch that defines Thai food. The only thing they nailed was the coconut rice, which honestly tasted like it came straight out of a pre-prepared packet from a supplier.
